1. add a little butter to your dough mixture, you will need to experiment to get just the right amount.
2. egg glaze the dough this will help prevent the bread from becoming so dry during the baking process

I have found if you make the bread recipe exactly like the recipe says, the bread is not very fluffy. Usually the recipe says to knead the dough for about 5 minutes and sometimes the dough needs to kneaded again. Do not knead as much. Also I have found adding some powdered milk really works, about 3-4 tbsp. You can also add two or three tbsp of yogurt, you will not taste it in the bread but it does make a difference. If you add one of the extras do not add more water. Also adding more oil can dry out the bread. Good luck and have fun!
