Smoked Salmon, Cream Cheese and Capers....
But also the regular things....
Onion, Peppers, Mushrooms, Cheese and Jalapeño!

In the 80's in Kansas it was called the womblie omelet. It had swiss, black olives, tomatoes, mushrooms and sour cream. It is awesome. I still make them today. Alot of people go ick to the sour cream but that is what makes it tasty. I now put it on all my omelets.

I like to make a souffle omelette, let it cool, lay my 'old chap' inside, cover it over and serve it to my girlfriend as 'breakfast in bed'... It 1 of her faves (she's NO vegetarian)!
