I eat a whole lot, but I am still skinny.

When my already crazy-skinny sister ran cross country and got even skinnier- we made her drink a big milkshake every night before bed. That way her body could absorb at least some of the calories before she burned them all off. If you exercise, always be sure to refuel with carbs and proteins within an hour. Timing is critical!

sure eat lots of foods laden with carbs bread, sugars etc, but also maintain a healthy diet at that

Hate to say it, but no. I've got the opposite problem.

My advice would be lots of protein and complex carbohydrates.
