Chicken Enchiladas and Spanish style Rice.
Boil 6 chicken tenderloins with the following:
1 tbsp. garlic
1 tsp. cumin
1 tbsp. salt
1/2 medium onion cut into LARGE rings
Remove chicken as soon as it is finished cooking, otherwise it will be tough. Remove the onion. Dice chicken in small pieces. Heat Oven to 375.
Open 1 large can Old El Paso Enchilada Sauce
Add 1 tbsp SALT and stir in well
Use approx 10-12 corn tortillas.
Fry corn tortilla lightly (3 to 5 seconds on each side) in cooking oil.
Lay flat. Place 1 to 1 & 1/2 tbsp. enchilada sauce on tortilla and spread around. Place handful of diced chicken in tortilla & roll it up. Place in baking dish. Repeat until finished.
Pour the rest of the enchilada sauce on top of enchiladas & top with grated monterey jack cheese.
Spanish Rice:
Add 1 tbsp salt to 1 lg can Old El Paso enchilada sauce
Prepare 3 cups white rice. Set aside.
Dice 1 lg. tomato, 1 green bell pepper, 1 red bell pepper, 1 medium onion.
Sautee onion in butter until clear, add other vegetables and 1 tsp. cilantro (dried) and sautee until onions carmelized.
Add rice and half can of sauce; stir gently.
Add the rest of the sauce and gently mix.
If there is extra liquid, simmer down gently.
Serve.

MONKEY BREAD!!!
Monkey Bread
Ingredients :
1/2 cup Chopped pecans
1/2 cup Sugar
1 tsp Cinnamon
3 can Refrigerated biscuits
3/4 cup Brown sugar
1/2 cup Butter
Method :
Preheat oven to 350 . Heat the brown sugar with butter, until melted.
Sprinkle pecans on bottom of bundt pan. Cut biscuit dough into quarters, and roll each quarter in the sugar- cinnamon mixture. Layer in pan. Pour hot brown sugar-butter mixture over dough, and bake for 30 - 40 minutes.
Invert onto plate and let cool 10 minutes before removing bundt pan and serving.

I make excellent Christmas cakes and sorry, that's a secret recipe which took me 12 years to perfect it. I sell them at Christmas and make them for gifts. Every year my list of cake as presents grows longer.

use a box of BETTY CROCKER cake mix and u will also need a small box of JELLO brand pudding to match the flavor of cake u picked. follow the directions on the CAKE box and add a quarter to half of the puddin in the bowl while mixing with the mixer. it makes the cake fluffier and creamer...taste like silky cake and melts in your mouth. everyone will know something is in it but will not be able to figure out what. i have been making this cake for 4 yrs now and all who try it love it. they ask me whats in it and i just say my secret..i guess my secret is out. please try and enjoy. put icing on it when cooled like normal and like u would. have fun with that idea and secret of mine..:)

My Moms loves how i make Kraft Mac-n-Cheese...there's just something about how i mix the ingredients-i realize that it's kinda gross.but it's my childhood fav. and i just NEED to have it everyother month for some reason.and she loves it-mixed in with hotdogs!!

i love to dish it out. what i make best is excuses why the recipe did'nt work. damn train went by and the cake fell. i put to much and not enough. i was watching the race and did'nt know i had to ???. you see it's easy.
