You keep the shell on. Treat it as if it were still attached to the lobster. Only take the shell off when you are ready to eat it. Even if you are splitting them, a knife will go through the shell.
Believe me I had to cook, dissect and split over 500 Lobsters less than a week ago. All the way up to being served, they stay in the shell.
It looks better, and it keeps the meat warmer a little longer.

Well, it does matter somewhat according to the way you want to cook them!
If you were to broil the tails, you would split the top the shell pull the tail meat out but try not to detach it from the end of the tail. Then you would lay the meat on top of the shell, season, and broil. However you want to grill the tails, so I would suggest that you REMOVE THE TAIL SHELL BUT KEEP THE TAIL MEAT IN ONE PIECE!! You might want to ever so slightly split the top of the tail to remove the vein there, but don`t cut too deep. I would then brush with melted butter, season and grill, but PLEASE, spray your grill or wipe with a towel soaked with oil before putting those tender morsels on it. This will keep them from sticking and ripping on the grill. Also, PLEASE don`t overcook them. Remember that foods,(especially seafood), will continue to cook when taken off the heat. You want to eat a nice succulent piece of wonderful, not be chewing on a cardboard rubber band!
Let me know how they turn out for you, and any more questions feel free to e-mail me!

My fave way to eat lobster is how Outback Steakhouse does them... they leave the shell on, and cut down the miiddle of the tail, so that when splayed open, it sorta makes a football shape. Season w/ your butter and lemon, and grill shell side down. Finish by turning over for a quick moment to sear top adn add a bit of color.

no, you don't. you can take a sharp knife and split the back if you want, but leave the meat in the shell until it's cooked. Grill it until the shell turns a bright red, about 3 to 7 minutes depending on your heat and the size of the tail.

NO!!!!!!! The lobster shell gives flavor to the meat. Plus it's very difficult to remove the shell before the meat is cooked.

IT DEPENDS WHAT YOU ARE MAKING. IF YOU ARE GOING TO JUST BOIL IT YOU LEAVE THE SHELL ON, BUT WHEN YOU ARE INCORPORATING IN A SAUCE, TAKE THE SHELL OFF AND SAUTE IT.
