This recipe is really delicious and very easy.
Keyshawn's Mom's Candied Yams
3 pounds sweet potatoes or yams
1 cup sugar
1 cup brown sugar
2 sticks sweet butter, cubed
Peel potatoes and cut into 2-inch cubes. Place potatoes in large pot, cover with sugar, brown sugar and butter cook over medium heat until potatoes are fork tender (about 20 minutes) but not mushy.
(Note: I add pecans and marshmallows on top. Just place in oven at 350* until marshmallows turn a light brown.)

SWEET POTATO SOUFFLE
3 LBS. SWEET POTATOES - PEELED & CUT INTO CUBES
2 EGGS
1/2 CUP BROWN SUGAR - DIVIDED
1/2 CUP BUTTER - MELTED - DIVIDED
1 TSP SALT
1 TSP GROUND CINNAMON
UP TO 1/2 CUP ORANGE JUICE
1 CUP CHOPPED WALNUTS
LARGE MARSHMALLOWS
IN A LARGE SAUCEPAN OVER HIGH HEAT; BRING POTATOES TO BOIL, REDUCE HEAT AND COVER, SIMMER 15-20 MINUTES AND DRAIN. BEAT POTATOES UNTIL SLIGHTLY SMOOTH, BEAT IN EGGS, 1/4 CUP BROWN SUGAR, 1/4 CUP BUTTER, SALT AND CINNAMON. STARTING WITH 1/4 CUP JUICE, MAKE MIXTURE MOIST AND FLUFFY. SPREAD IN 2-3 QUART PAN. TOP WITH NUTS. SPRINKLE 1/4 CUP BROWN SUGAR, THEN 1/4 CUP MELTED BUTTER FOLLOWED BY MARSHMALLOWS.
BAKE AT 350 FOR 25-30 MINUTES.

Put you a little butter, you can add a little bit of maple syrup or even molasses..and top with marshmallows if you like..I don't use exact amounts..I should..but, I learned to cook the old fashioned way..Am good with all kinds of cooking...I love it..you can always e-mail me deama with sbcglobal.net and you will have it...lots of luck! Try baking them (like a regular potato) and serve with sour cream, and toppings of your choice.
OR
Thick slices and cook on grill until tender - season and/or top as you want.

I like them with orange. I use either fresh oranges putting in the juice and grated peel of one orange for three large or six small sweetpotatoes or half of a small can of orange juice concentrate, but you can use more or less to please yourself. I do this along with the butter, brown sugar and salt.
