If you are grilling the steak, you could also throw some vege kabobs on the grill (green/red pepper, partially cooked red potatoes, zucchini, little pieces of corn on the cob, etc). If not that than I love to cook an acorn squash. I zap it in the micro for about 5-7 min to soften, then cut in half, spoon out the seeds and fill each half with 2 tblsp. of butter, 2-3 tblsp. brown sugar, some raisins and some walnuts and wrap in tin foil, place in oven 350' for 30 min. It's delish. Also, my favorite salad lately has been prepackaged spinach, with a couple handfuls of craisins, a 1/4 - 1/2 cup of almonds or pine nuts with a raspberry viniagrette. Yum. I could go on and on, but now I'm hungry. Good Luck

Steak Marinade Recipe #7926
Simple ingredients that don't overpower the flavour of a great steak.
2 tablespoons lemon juice
3 teaspoons Worcestershire sauce
1/4 cup oil
2 garlic, minced


Place steak in a non metal dish just large enough to hold it or in a sealable plastic bag.
Refrigerate for anywhere from 2 to 24 hours.


Peppered Steak With 5 Star Gourmet Steak Sauce Recipe #14897
This is so nice your mouth will still be watering after you finish it. Do not buy shop made pepper steak; the homemade pepper steak is so much better. A must try.
SAUCE
1/2 diced tomatoes
salt
pepper
1 tablespoon dry sherry
2/3 cup tomato sauce
1/3 cup water
2 teaspoons paprika
oil
PEPPERED STEAK
1 large rump steak, cut in half
4 tablespoons crushed peppercorns
1 egg
fresh parsley

SAUCE-----------------.
Place the oil in the bottom of a saucepan.
Cook the diced tomatos in saucepan on low heat.
Continually stir them.
Add pepper and salt early on in the cooking of the tomatoes.
When the tomatoes are nearly cooked add the dry sherry.
Now leave the tomatoes for 1 min so that all the sherry is absorbed in the tomatoes.
Add the tomato sauce and stir in and then add the paprika.
Add the water slowly so that the thickness is what you desire.
Serve on top of steak or as part of a fancy dish.
PEPPERED STEAK--------------.
Beat the egg so that the yolk is blended in with the white.
Dip the steak piece by piece into the egg.
Then cover the steak with the peppercorns.
Place the steak onto high heat for 30 seconds each side and then reduce heat and cook until it is how you like it.
Once cooked place on a plate.
Generously pour the sauce over the steak and garnish with a bit of fresh parsley.
Serve and enjoy.

I made this for the first time last night for a friend and I. The recipe was very easy to make, though I didn't add any water because I thought the tomato sauce I bought was runny already. I also added mushrooms and found that added a great texture. The sauce was so delicious! I will definitely make this again! —

Roasted Asparagus


2 bunches medium asparagus
2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
Freshly ground black pepper
Grated or shaved Parmesan, optional

Preheat the oven to 450 degrees F.

Trim the woody ends from the asparagus, usually about 1 1/2 inches. Lightly peel the remaining stalks (not always necessary, but more of a personal preference). Spread the spears in a single layer on a baking sheet, drizzle with olive oil, sprinkle with the salt and pepper, and roll to coat thoroughly.

Roast the asparagus until lightly browned and tender, about 8 to 10 minutes, giving the pan a good shake about halfway through to turn the asparagus. Arrange the roasted asparagus on a serving platter and top with some Parmesan. Serve warm or at room temperature.

If you want something a little spicy here's a great one:

2 cans Cut Green Beans
2 cans Whole Kerrnel Corn
1 can Rotel

Empty all them in the pot. Add salt, pepper, and garlic powder. Cook on a medium heat til it starts boiling and then simmer for about 30-45 minutes . It's not extremely hot, my two kids 2 and 6 eat it. If you want it spicier you can do 1 can green beans and 1 can corn.

If you have a can of chicken broth, for an even better flavor drain most of the water from the veggies and add the chicken broth to simmer.

Very simple, very good!

Twice Baked Potatoes

How about twice baked potatoes? first you bake the russet potatoes in the oven at 375. for about an hour prick them w/ a fork so the don't burst in the oven > Also it's a good idea to scrub them first sorry before you put them in the oven. Then when they are done. Slice them horizontally and take the filling out watching not to burn yourself. Fill a bowl with the potato filling some cheese of your liking sour cream and a little parsley. You can even add fried bacon bites if you want to get fancy. Then stuff the potato's back up with the filling. Put them back in the oven and bake for about 20 minutes or until filling is bubbly.
Green Beans:

Enjoy You can even make steamed green beans and top them w/ almonds and a little lemon juice and butter. :)

Or a quick summer favorite is Tomato salad
Take beef stake tomato's and add fresh mozzarella w/ Basil
sprinkle with olive oil and balsamic vinegar and your good to go.

I should just hand you a cook book anything goes with steak lol.

But here is one of my favorite side dishes and it would go great with steak

Feta cheese peppers

Serves 6+
160 calories with grean pepper
165 calories with red pepper
170 calories with yellow pepper
Total prep and cook time about 50 minutes

Ingredients:
1 cup cooked rice
3 med peppers of any color
2 tbsp olive oil
1 cup onion choped
1 cup tomato diced
1/2 cup feta cheese
2 tbsp cumin
1 tbsp oragano
salt and pepper to taste

Directions:

Preheat oven to 350 degrees

Cut peppers in half long ways and deseed

Place peppers, cut side down, in pan and place in oven

Roast peppers for about 35-40 minutes or untill tender and skin starts to brown

In skillet heat oil then add onions and cook till tendar

Add tomatos and cook for 2-3 minutes

Remove from heat and add onions to rice then add the cheese and seasonings

Stuff the peppers then place back in the oven for about 5 minutes

cut up raw baking potatoes into chunks, toss with some vegetable oil and a package of lipton onion soup mix, put in a covered casserole dish and bake.

I like to chop up onion, potatoes and carrots with a dab of butter. Wrap the mixture up in tinfoil and cook it on the grill. Season it with salt, pepper and a bit of garlic. Mmmmm....
