cook them very fast under the broiler. if you cook them too long, they turn out like leather. remember: marinate, marinate, marinate! if you're new to cooking, just use a bottle of Italian dressing, soak for at least an hour.

Beef Shish Kabob or Kebabs
These delicious marinated beef and vegetable skewers can be broiled or grilled.
INGREDIENTS:
1 envelope Good Seasons Italian salad dressing mix
2 pounds sirloin steaks or other
tender cut of beef, cut in 1 to 1 1/2-inch cubes
18 large whole mushroom caps
18 green pepper chunks
15 cherry tomatoes
12 small whole onions or onion wedges
PREPARATION:
Prepare dressing mix according to package directions. Add beef and coat well with mixture. Cover and refrigerate for 4 to 8 hours. Add vegetables to the beef and toss to coat. Arrange beef and vegetables on skewers
Broil or grill over hot coals to desired doneness. Serve with rice and a tossed salad.

1 bottle teriyaki marinade
1 clove garlic, minced
Black pepper, freshly ground
2 pounds beef or chicken, cut into 2-inch cubes
1 pound large white mushrooms
2 pints cherry tomatoes
2 bell peppers, cut into 1-inch squares
2 onions, cut into 1-inch slices
1 can chunked pineapple
Bamboo skewers, soaked in water
Directions:
In a large bowl, mix marinade, garlic and black pepper. Add beef or chicken; marinate 2 hours in the refrigerator.
Alternating meat, vegetables and fruit, thread ingredients on individual skewers. Turning often, broil or grill skewers for about 20 minutes.

HONEY GLAZED CHICKEN KABOB
4 lg. boneless skinless chicken breast halves
1 lg. squash
1 med. red bell pepper
4 oz. med. mushrooms
1 lg. zucchini
HONEY MUSTARD GLAZE:
3/4 c. honey
1/2 c. spicy mustard
2 tbsp. soy sauce
1 tbsp. cider vinegar
2 tbsp. cornstarch
Oven 450 degrees or grill. Thread chicken and vegetables on 4 (12 inch) skewers.
Mix glaze until boil; add cornstarch with 1/4 cup water. Add until thickened. Grill 8-10 minutes brush with glaze; continue grill 5 minutes and cooked through or
bake 15-20 minutes. Brush with glaze. Bake 5 minutes more.
Just stick with the Bake part, disregard the grill part.

1 lb. pork, cut into cubes
1 bag frozen broccoli, cauliflower, carrots
2 potatoes, cut into cubes
1/2 bell pepper, diced
1/2 red bell pepper, diced
3 Tbls. butter or margarine
Add your favorite herbs and spices or Mrs.Dash. Mix all ingredients together; put in baking dish and cover. Cook for 1 to 1 1/2 hours.
OR,
4 large chicken breasts
One can coconut milk
Pam non-stick cooking spray
1 bag shredded coconut
1 teaspoon cumin
6 to 8 beaten egg whites
Shish kabob sticks
Directions
1. Cut chicken breasts into large bite-size pieces and place in shallow baking dish. Pour coconut milk over the chicken and marinate overnight.
2. Spray large baking sheet with Pam. In a large mixing bowl , pour in shredded coconut, sprinkle on cumin and mix thoroughly. Spread on baking sheet and toast in pre-heated oven at 350 degrees for 12 minutes. Toast lightly.
3. Dredge chicken bites in egg whites; roll in toasted coconut and skewer onto sticks. Place on Pam sprayed baking sheet. Bake at 350 degrees till toasty (about 12 minutes), but don't overbake.

Boil the meat in marinade or salted water until cooked. Skewer with your favorite vegetables and then sear on a preheated non-stick pan. You may also want to fry or bake it, but I would recommend pan seared first.
