Or do the varieties in cows only make a difference in the type of beef they produce? This is really bugging me! :) Thanks so much for any help you can give me!

It's not the cow, it's what it eats.

Cows from different locals will eat different things.

The difference in diet effects the milk, and the milk effects the cheese.

But other factors in the cheese making process play a more important roll then milk at determining what the type of cheese is made.

Thats a good question, I've never thought of. It might of helped if you had worded your question a little better (use common sense - cows don't make cheese, people and machines do.) I wish I had a good answer for you, but, I really have no idea. I do know that it makes a big difference on the way the milk the cow gives is processed. I mean have you noticed how different brands of milk taste. Compare Mayfield milk to a store brand, Mayfield wins hands down.

Is this a trick question? Cows don't produce cheese. They produce milk. Humans convert the milk into cheese. It is the conversion process where different types of cheese are created. Dairy cattle are used to produce milk.
Beef cattle are raised to be eaten. Diet of the beef cattle affects the flavor of the beef. Some beef cattle, i. e. Black Angus, have a reputation for having better-tasting meat.

Well, different cows do have varying quantities of butterfat in the milk and butterfat does add richness to cheese. Most of the varieties of cheese, though , are done by using different cultures and processes. Cheddar is produced by heating (or cheddaring) the curds. Bleu and others have mold in them to add distinctive flavor. It's more the process that makes the different cheeses, rather than the cows.

I don't think the cheese varies that much from cow to cow. I know buffalos in italy make a famous mozzerela thats different from a cow milk cheese. Fat content in milk is what makes different cheeses.

And of course sheep and goat cheese is different.

The cows don't have much of anything to do with it. It's the cheesemakers that decide what kind of cheese to make.
