Well this one is called spinach quesapo (kes-a-po) this is somewhat of an italian dish. You can chop spinach up like salad or you can cook it like greens. Then take your favorite seafood or regular meat and chop it up. If ur making a spinah sald chopping it up is good. If ur not leave it hol or cut in half. Next put the spinach on top of the meat add your favorite sauces and top it off with a big slice of italian bread.

The snack I am eating right now is:
Turkey Deli Slices
Cream Cheese, softened
Finely Chopped Spinach, raw
dash of Garlic powder
dried minced onions
Just take everything but the turkey and mix it together. Spread onto the turkey slices, and roll them up! YUM, you have turkey spinach roll-ups!

1/4 cup butter or margarine
1/4 cup all-purpose flour
1/4 teaspoon pepper
1 cup milk
1 teaspoon instant minced onion
1 teaspoon salt
1/8 teaspoon nutmeg
3 eggs, separated

Prepare and cook spinach or Swiss chard; chap and drain thoroughly. Heat oven to 350 degrees.
Butter one 1-quart dish or casserole. Melt butter in saucepan over low heat. Blend in flour, 1/4 teaspoon salt and pepper. Cook over low heat, stirring, until mixture is smooth and bubbly. Remove from heat and then stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Remove from heat. Stir in onion, 1 teaspoon salt, and nutmeg.
In a large mixer bowl, beat egg white and cream of tartar until stiff; set aside. In a small mixer bowl, beat egg yolk until very thick and lemon-colored; stir into white sauce mixture. Stir in spinach. Stir about 1/4 cup of eggs whites into sauce mixture and gently fold into remaining egg whites.
Carefully pour into casserole dish. Set casserole into pan of water (1 inch deep). Bake 50 to 60 minutes or until puffed and golden and until a silver knife inserted halfway between the edge and center comes out clean. Serve immediately.

Wilted Spinich Salad
first wash and dry it. Spinich can be sandy. tear it up as if for a salad and make a few hard boiled eggs. Then
Fry a couple of strips of bacon until they're crisp, crush them up and add a bit of vinager and a bit of sugar in with the warm bacon grease until it tastes right to you and (this sounds wierd but its so good) dump it in with the greens and sliced hard boiled eggs. Serve it while still warm with hot buttered and toasted french bread and a good grilled meat. Its classic Southern cooking.
