I recently dined at Cracker Barrel and really loved their cole slaw: light, crunchy, not soaking in dressing, yet moist enough. Does anybody here know how to make this or any other good cole slaw for that matter?
Also, how do you shred cabbage for cole slaw? (grater? food processor? just knife?)

From the Cracker Barrel Cookbook

COLESLAW DRESSING

1/3 c. cider vinegar
1/3 c. oil
1/4 c. sugar
1 tsp. salt
1/4 celery seed
2 sprigs parsley, minced

Stir all ingredients together until well blended. Pour over slaw and serve at once.

Try to use a cheese grater for the cabbage and carrots. Thats what I do... I have the "deluxe cheese grater" from Pampered chef that works great!

I always use a knife to shred my cabbage, I cut it in thin slices and then cut it into small sections. Here is the recipe for the dressing that Cracker Barrel puts on their coleslaw


COLESLAW DRESSING

1/3 c. cider vinegar
1/3 c. oil
1/4 c. sugar
1 tsp. salt
1/4 celery seed
2 sprigs parsley, minced

Stir all ingredients together until well blended. Pour over slaw and serve at once.

I have a Cracker Barrel recipe book and here goes:

COLESLAW DRESSING

1/3 c. cider vinegar
1/3 c. oil
1/4 c. sugar
1 tsp. salt
1/4 celery seed
2 sprigs parsley, minced

Stir all ingredients together until well blended. Pour over slaw and serve at once.


We use the pre-packaged coleslaw in to produce department :) or use a food processor :)

MY Favorite Slaw is a home made one...Thinly sliced Cabbage, grated peeled carrots, a small amount of raisins and/or pineapple slices, sunflower seeds and then dressing. The dressing is miracle whip, with a bit of sugar and vinegar. Mix it to taste and mix it into the slaw. A hint of lemon squeeze or lemon peper goes a long way too. Check it out, its awesome!!!

Shred the cabbage with a large knife, cut crossways on the cutting board till you get these big slices of cabbage, then dice them up as you would onions for chili.

there's a web site that has recipes from all kids of restaurants. www.topsecretrecipes.com. It might be on there. or you can try going to the store and they have the cabbage bagged and they should have the dressing to.
try using a knife to cut the cabbage.
