5. Honey or jam on toast.
6. Pancakes filled with with fruit/ sprinkled with lemon juice and sugar or honey.
7. Garlic bread with grilled tomatoes or mushrooms.
8. Porridge oats made with water, sprinkle with sugar or honey for extra taste.

If you eat fish, eggs and milk products, that would help tremendously. You are still growing and still need the essential amino acids found in those foods.
Being a vegetarian doesn't just mean not eating meat, but eating the rest of the food the family eats. You will quickly become malnourished this way and lose muscle. You need to eat cooked dry beans, peas, legumes/lentils at least once a day, over rice, cous cous, or pasta. If you call that an "odd" ingredient, maybe you should wait to beomce a vegetarian.

My favorite breakfast is corn muffins and coffee. Fresh corn muffins are great! I've made whole-wheat pancakes with those veggie-sausages when I've had company over. Thats a good veggie breakfast, too. If you have the time, try cutting figs or dates into the water before you boil it for hot cereal. Cook it (oatmeal, farina, corn grits or whatever) like normal hot cereal. Chop some nuts and stir them in before its done to soften them up a bit and add a some cut up fresh fruit like peaches or strawberries when you take it off the stove. Its different, but delicious!
PS I've been a vegetarian since 1979. Rock on, sister!

I like to grill vegetables. Although the recipe below is for asparagus, the marinate works for squash and peppers too. Pair with cheese and sour dough bread for a light lunch or sandwich
Prep asparagus by snapping off ends, and scoring the stems. Microwave about 1 minute per pound on a plate with a tsp of water.
Transfer to plastic bag and marinate for at least 30 minutes with some soy sauce, flavored olive oil, balsamic vinegar, garlic salt.
Place on grill, turning frequently until tender.

This is a very old fashioned recipe that my grandma taught me... but it was surprisingly good:
place a sliced boiled egg over two pieces of toast and cover with white sauce.
A white sauce is made by boiling some milk and adding flour to thicken like a gravy. Add salt and pepper to taste. My grandma and I would eat this for dinner on Fridays during Lent (because we are Catholic and can't eat meat).
Another recipe I enjoy is to cut up zucchini and summer squash in a pan with some butter and a little onion. Fry until the squash and zucchini are soft. I usually add a little pepper and garlic salt.
And have you ever had spaghetti squash? You cook it like regular squash but when it is cook, used a fork to scrape out the insides. It comes out like spaghetti. Just add your favorite spaghetti sauce or saute some peppers and onions in oil and garlic and top it with that. Yum!

eggs (if you eat them) are ver versatile. Try a frittata (an open faced omelette) with veggies, or a quiche is always really simple to make. You can make sandwiches out of tortillas, or lettuce wraps. Sautee up your veggies, and put some really good sauce, like SOY VAY VERI TERIYAKI, or othe type of asian sauce, and roll up in your wraps. The frozen section of the grocery store has MORNINGSTAR FARMS products, and they have fake steak strips, chicken strips, sausage crumbles, ground beef, all totally vegetarian. You just substitute in any recipe that calls for meat, like lasagna, stir fry, fajitas, etc...and they also make fake breakfast meats like bacon and sausage patties. I love a sausage patty on a bagel with egg and cheese. Good Luck!

My freshman year in college, I was vegan, and ate only dinners in the college cafeteria. For breakfast and lunch, I made all kinds of things in a small 3-cup rice cooker, the only appliance I had in my dorm room. For breakfast, I would throw into the rice cooker dry multi-grain hot cereal, dried fruits, and nuts. I could vary this a lot based on different types of cereals, fruits, and nuts. For lunch, I put different types of rice, beans and lentils in the rice cooker. Beans and lentils required more water and longer cooking time than rice, but worked equally well in my rice cooker.

INGREDIENTS:
1 tablespoon vegetable oil
1 onion, chopped
4 cloves garlic, minced
6 cups canned kidney beans, drained
2 cups water
3 tablespoons chili powder
2 teaspoons ground cumin
4 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
3 tablespoons soy sauce
4 cups cooked and mashed sweet potatoes
12 (10 inch) flour tortillas, warmed
8 ounces shredded Cheddar cheese

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
