Shred corned beef, cooked potatoes (or frozen hash browns), cooked beets, and onions in proportions to your liking. Add salt and pepper to taste. You may add a small amount of gravy, or a little ketchup to moisten. Heat to cook onions, and enjoy!

My dad made homemade hash out of leftover beef stew. He used a grinder to combine the leftover beef and veggies to make a hash that he then panfried.

You could do the same thing with cooked corned beef, potatoes and if you want you can add onions and carrots. Just use a food processor or old fashioned grinder to grind the ingredients together.

My dad would panfry the mixter with salt and pepper, then crack some eggs over the top. Then cover the pan until the eggs were cooked. My mom's favorite part was the crunchy bits that were at the bottom of the pan.

Wow, this question brings back some great childhood memories.

Corned Beef Hash
Yield: 1 Servings

Ingredients

1 ts corned beef
1 onion, chopped finely
2 potatoes; medium, boiled
2 eggs
1 pepper
1 1/2 ts dry mustard

Instructions

Dice corned beef and cooked potatoes (or substitute coarsely grated
raw potato). Chop onion finely. Mix together in a bowl, adding
seasonings, add egg and mix more. Put in skillet, coated with oil and
form patty 1/2"-3/4" thick, sprinkle with dry mustard. Cook till
crispy (about 10 minutes), cover with a large plate and flip over.
Sprinkle with mustard and cook till crisp. Serve with a fried egg
on top.

INGREDIENTS:
2 to 3 tablespoons butter
2 cups cooked corned beef, finely chopped
3 cups cooked, chopped potatoes
2 tablespoons minced onion
2 tablespoons chopped parsley, optional
salt, pepper and brown gravy

PREPARATION:
Melt butter in a large skillet over medium-low heat. Add corned beef, potatoes, and minced onion; spread evenly in the skillet. Brown on one side; turn with a spatula and brown the other side. Continue turning until most of the meat and potatoes are well-browned. Drain off excess fat and moisten with 3 or 4 tablespoons of brown gravy or beef gravy. Sprinkle with salt and pepper, to taste. Garnish with parsley, if desired.

CORNED BEEF HASH
INGREDIENTS:

3 lbs. corned beef
3 potatoes
2 Tbsp. butter
1 green or red pepper
1 large onion
1 whole egg
1 egg yolk
1 tsp. Worcestershire sauce
4 Tbsp. butter


DIRECTIONS
Place corned beef in kettle, add water to cover, and bring to boil, then lower to a simmer and allow to cook for 3 hours.

Remove from kettle and let cool.

Trim off excess fat and cut into small cubes.

Boil potatoes in salted water until tender, but still firm

Drain, then cool.

Chop pepper and onion into a fine dice, then sauté in butter until wilted.

Put corned beef, potatoes, pepper and onion in a bowl, then add whole egg, egg yolk and Worcestershire sauce.

Blend well, form into a compact loaf, cover with plastic wrap and refrigerate, preferably overnight. Or form into individual patties.

Heat butter in skillet and add meat mixture, turning to cook thoroughly.

When meat is nicely browned, place under a broiler for a few minutes to make the top crisp.

Serve with poached eggs.
