I have the simplest Lasagna recipe..here it is..
Box of uncooked lasagna pasta
1 pound of ground beef (cooked and drained of grease)
1 regular jar of Prego (any kind, I like the one with mushrooms)
1 carton (large) small curd cottege cheese
1 large package of mozzerella cheese (grated)
1 large container of grated parmesean cheese
2 eggs
Salt and pepper to taste
First and most important..YOU DON'T NEED TO COOK THE PASTA..PREPARE IT JUST AS I SAY BECAUSE IT WILL COOK WITH THE OTHER INGREDIANTS..BELIEVE ME BECAUSE I HAVE PREPARED THIS 20 TIMES DOING IT THE SAME WAY...
Mix the ground beef and sauce together afte the meat is cooked. Set aside, Take the cottage cheese and break both eggs in the container and mix thoroughly, take your salt and pepper and flavor your cottage cheese mixture, set aside. Then get a 9 1/2 x 11 pan. Put a couple of spoonfuls of the sauce and ground beef mixture and spread in the bottom of the pan. Then add 3 or 4 (what ever will fit without overlapping) lasagna noodles, then cover them with more sauce and beef, over that add the cottage cheese mixture (1/2 the container) followed by 1/2 the shaker of Parmesean cheese, then some Mozzerella cheese. Repeat the process with rest leaving enough mozzorella cheese for the top. Cover the top lightly with foil (don't touch cheese) and bake at 350 for 50 minutes..then at the last 10 minutes uncover and bake for 10 minutes..watch so that the cheese doesn't burn but brown...at 1 hour check with knife through the lasagna for doneness..let set for about 1/2 before serving...it will be the best stuff you have ever had and tastes even better days later..if it lasts...

I like my lasagna very basic, sauce, noodles, meat, and cheese. But you can add anything you want to the sauce, mushrooms, onions, whatever. But first I brown the meat and add it to the sauce. I then heat the sauce until it starts to bubble a little. Then I take the sauce and place a layer at the bottom of my pan. Then I add the noodles going across. Its usually 3 or 4 wide. Then I put sauce on top of the noodles until they are covered, and add a layer of cheese. I only use mozerella, but some people use ricotta too. Then repeat the layering process. It usually takes 3-4 layers. The most important thing though is to use lots of sauce so your noodles don't get dry. Once its all layered up, cover the pan with foil and bake at 350 for an hour. Hope this helps!

My first suggestion would be to NOT used jarred or canned spaghetti sauce. Just make you own sauce. First brown up some lean hamburger and also use ground sausage. How much depends on how meaty or not you want your sauce. I use one pound of beef and 1/2 pound of sausage. If you like spicy, buy italian ground sausage. Brown that up, drain and season with salt, pepper and some minced garlic. Start your sauce in a big pot, use a combination of tomato sauce and paste to get the consistency you like, more sauce means less thick. I like mine thick so I usually use at least 4 small cans of paste and one can of sauce. Add a bit of olive oil and a crused glove of garlic. Use 1/2 packet of spaghetti seasoning to add some spice. You know the kind that comes in an envelope? Once this heats up, let it simmer and taste than start adding white sugar until it gets to taste the way you want. Once you get the taste you want, let this simmer, it can simmer all day if you stir it once in a while. Just don't use too much heat or you'll have tomato sauce "popping" all over your stove top.
While your cooking your sauce you should be boiling a GREAT BIG POT OF WATER for your noodles. Once its boiling, put the noodles in and give them a stir. Watch them close, you don't want them completly cooked! Drain when done.
Now your ready to assemble. Open a carton of cottage cheese, dump in a bowl and add an egg and whisk. Have lots of shredded mozzarella cheese on hand.
put a small amount of sauce in the bottom of your layering pan first, this prevents the noodles from sticking. Layer noodles, meat sauce, cottage cheese mixture and mozzarella and keep layering till you reach the top, ending with the mozzarella.
Whew. I think we're done! IT bakes in a 325 oven for about 45 minutes loosely covered with tin foil, when you take it out remember to let it sit for about 15 minutes.
A tweak to the above is to take a cooked noodle and put meat sauce, cottage cheese mix and mozzarella, roll it up and have lasagna rolll up. Put them all side by side in a pan and bake.

Depending on if you want vegetarian or meat in your lasagne.
Buy the 'no boil' lasagne noodles. Make a good tomatoe sauce
with ground hamburger or without, you can also add mushrooms and onions to your sauce. Try using mild Italian sausage, casings removed, and fry that up and add it the sauce.
Start layering with sauce, noodles, ricotta/cottage cheese, parmasan cheese, more sauce and noodles. Bake at 400, for about 45 mins to 1 hour, make sure your noodles are covered with sauce or they will come out hard.

Lasagne's pretty simple. Make sure you have plenty of sauce handy and be sure that the top layer of pasta is submerged under some sauce and cheese, or it will get hard and crusty. Not good for lasagne. Also, if you can find someone that makes fresh pasta in your area, it will definitely add to the flavor of the dish, and you can usually skip the boiling the pasta step and go right to building the lasagne.

I don't use the kind of recipe where the noodles are put in uncooked...I feel it's too tricky making sure they have enough time and liquid to cook properly. Boil/cook them ahead (in salted water) , then layer them with the other ingredients. Then you only heat enough to melt the cheeses. My other suggestion is to add pepperoni slices (they come in a plastic packet in the deli section) if you're not making it vegetarian. The pepperonis add a nice spicy kick.

use riccotta - never use cottage cheese unless you want to put it in cheese cloth and drain for a couple of days.
