I've taken a roast and put in with first potatoes(they'll absorb a lot of the juice from the roast itself) but you could go from there.... I've done cauliflower and broccoli, cabbage, onions, green bell peppers, mushrooms.....just whatever you might like.

please for God's sake don't start putting sugars or fats on to vegetables to get your son to eat them - it will start a bad habit that he will fight for the rest of his life. The best thing I did was make a full size family batch of mashed potatoes once a week, usually Sunday, and divided it into portions for the kids. Then I would puree the veggies i wanted them to eat every night and add them to the potatoes. Add salt, pepper, a bit of olive oil and they always ate it. They loved the colors and we made it fun guessing which color the "potatoes" would be that night. Today my kids love the flavor of veggies because we didn't mask them with sugars and such and they are much healthier because of it.

I like to through in some red bell peppers when there's about an hour left in the roasting. Their good in stuffing, too.

Most any veggies only need to be addes the last hour or so, or they fall apart into mush.

New Potatoes (not bakingpotatoes)

Rutabaga

I've used potatoes, onion and fruit - like apples. I've also thrown lemon in there for aeromatics. I know some people who have used fennel.

i add small red pototoes and cut up yams...carrots...onion
on ocassion...i use ...brocolli...cauliflower...carrots
or 2" pcs of corn on the cob with 1" slices of zuchinni and yellow squash....
the wonders of pot roast...you get to create for a truely different recipe!

My husband added sweet potatoes, mangoes, and asparagus...it was a really nice compiation with the sweet and the savory.

Mushrooms, and I hace heard of parsnips being used but I haven't trien them, bell peppers work well.
