Take your hard boiled egg and slice it up mix in a bowl with some mayo or sandwich spread, mustard and relish. You can eat it as a sandwich or on crackers. You can also stir in some canned tuna (drained) or chicken.
You can try making a fried egg sandwich but to change it a bit, add chopped onions, chopped ham or bacon, strips of chicken or beef and add some salsa.

put a couple of chicken breasts in a baggie. add about 1/2 cup italian dressing and close the baggie. Put in refrigerator for 1 hour. After an hour, pour breasts, sauce and all on a small baking sheet and bake in a 350 degree oven for 15-20 minutes. at that time, check to see if they are done. If not, add another 10 minutes or until cooked through. Most any oil and vinegar based salad dressing makes a good marinade and you can change the flavors that way. You could also do up a bunch of chicken breast that way and freeze them. then you can thaw and heat in the microwave as you need them. Just be sure to wrap the cooked ones very well when you freeze them. A chicken breast and a couple slices of cheddar cheese on a crusty bread with lettuce and tomato would be a great sandwich.

you could make a fancy omelet with goat cheese - I like mine with ham and spinich in it too.
Start as you would a scrambled egg (I use 2 whites/1 yolk/milk/salt). Pour the egg in the pan that you've melted some butter in. gently stir the bottom with a silicone spatula so it cooks but not just on the one side. Swirl the pan around, so the bottom stays covered and you get a nice circle of cooked egg. When the egg is softly cooked on the top - add a few little pieces of goat cheese, diced ham and a few pieces of spinach. Fold the omelet into a half circle and let cook for just a minute to let the cheese get melty. Then put on your plate - sprinkle with pepper/salt if you like and enjoy! Whoala -gourmet eggs!

A friend of mine used to get the liquid eggs.
Get a coffee mug, spray the inside with cooking spray.
Pour some of the eggs into the mug. Add salt or pepper if you'd like.
Put in the microwave for maybe 30 sec. (Watch it, it'll grow!)
Get a roll or bun, or whatever bread you wish, put what you like on it (they used mayo.)
Slide the egg out of the mug, place on the bread, you may need to cut the egg in half, it'll be too high.
Add a slice or two of ham, and a slice of cheese.
Put the top on, and now you have a delicious breakfast (or anytime) sandwich!

I myself can't stand eggs but like this quiche that is made with only 5 other ingredients. Potatoes, sausage, onions, and swiss cheese, can of unsweeted carnation milk. You buy a two pound bag of hash brown potates and put them in the oven at 400, while you prepare the other ingredients. In a bowl whip up 5 eggs, the can of milk (12 ounces), black pepper, and nutmeg. Fry up 1lb of ground sausage with your chopped onion. Take out the potatoes and layer the sausage over the potatoes and take the slices of swiss cheese (just craft slices are fine) and pour the egg over top of it (it will pour down through the holes) and continue baking until the edges are brown. It's really simple doesn't take alot of prep time and tastes AWESOME!

frittata is one, dice 1/2 onion, 1/4 bell peppers, 1 med.tomato, 2 slices ham, or bacon, 1/4 carrots,1 small potato. and beat 3 eggswith a little milk (2 tbsp.) season with salt and pepper. lightly fry the potatoes till golden brown, set aside. in the same pan with 2 tbsp. used oil, add in bacon or ham, then onion, tomato, carrots, bell pepper, and lastly potatoes, salt and pepper. then pour the egg. let the fire down to med-low until the bottom has set ( about 2mins) then bake in pre-heated oven at 350F for 3-5 mins. lightly golden brown on top. serve with some sour cream and your favorite cheese. yum yum. very good for lunch or dinner too. another one is dessert. with 6 dove candy ( dark chocolate no nuts) place 1 heaping tsp. of margarine or butter and microwave for 20 seconds, stir until liquid. then beat until soft peak 2 whole eggs, sift in 1 tbsp. of all pupose flour or grind some unsalted peanuts or any nuts you like still at 1 tbsp., stiring with a whisk add the egg to the chocolate. 1/4 mix first then another 1/4 mix then the rest. microwave for about 50 seconds and viola!!! you own flourless cake. ( makes about 2 med. sizd portions) use any 4 inch soup bowl or scoop into large paper muffin cups use two for stability. let me know if you like it.
oh and simple one if your don't like to do alot is just to scramble eggs and layer with smoked salmon, toasted whole wheat bread, sour cream and caviar. is soo good.

Have you tried 1 cup of milk(low fat ok);1/4 cup of sugar;1 egg.Put in blender add 1/4 cup of orange drink(not juice) and a tbl spoon of vanilla extract.Then add ice cubes while blending(makes a heck of a noise) till it becomes the consistency of a daiquiri (still slightly liquid). Its a drink that tastes like the old ("Dreamsicles") you can vary the OJ with pineapple,or any fruit(strawberry is nice,so is banana)Its low fat soft ice cream so be care-full when you drink it or ice headache.Or custards.

toasted western
4 eggs
diced green and red pepper pieces
broken up pieces of lunchmeat ham
and diced onion
stir the above in a bowl and put into a vegetable sprayed frying pan that is heated.
let it cook until the top gets solid looking
and then flip over and cook other side until brown.
cook until cooked.
add moz. cheese to top and put into 2 slices of toast with ketchup.
yummy!
