I really have no idea why, but often when I eat some sort of a skinny cheese, it tastes GREAT!!!
You know, sometimes cheeses have too much mass in them of different things to create their taste so it doesn't taste so good when you eat it thick. But probably when you just take a little bit of it, you like it better... little by little, y'know?
For example, I don't think any normal person will actually eat something with around 40 mL of hot souce in their plate without screaming with pain and saying it's too hot for them. However, if there was less hot souce... like say 5 mL... it would taste better because it wouldn't be as hot. See my point?

I don't eat anything that stinks. It's natural for the body to be repulsed by offensive odors. I don't know why anyone would eat "stinky" cheese. I heard about a really bad one that won the best cheese in France award this last year. It was made of cat's milk and I guess was the stinkiest cheese ever. Maybe you should try that.

When the bacteria break down the cheese for you it creates new compounds that your taste receptors on your tongue can pick up. Remember you have 4 types of taste buds sour, sweet, salty, bitter. New thinking believes there is one more, called savory. Of which fermented cheeses would be an example, an that don't fit the common 4. Anyway you look at it- it's all good!!!

fungi grows in it this gives it the bad smell but makes it a more rich flavored cheese because of this extra ingredient
