One that is not too hard to find ingredients for and one that will satisy a wide range of tastes. But something a little more exciting than chocolate chip (though I love those, 'course). Thanks!

1 cup butter
1 cup shortening
1 cup shredded coconut
4 cups rolled oats
2 cups white sugar
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup boiling water

DIRECTIONS:
Set aside boiled water and cool until lukewarm. Mix butter, shortening, coconut, oats, sugar, flour, baking powder, baking soda and salt with fingers until dough reaches the consistency of pie crust. Add lukewarm water and work into dough.
Make dough into one inch balls. Flatten with a fork.
Place on greased cookie sheets and bake at 400 degrees for 10 minutes

I always get great reviews from these. They taste like a specialty cookie and they are very easy. The recipe is also on the back of the bag of craisins so no need to print it and take with you.

Oatmeal Cranberry White Chocolate Chunk Cookies

INGREDIENTS:

2/3 cup butter or margarine, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 6-ounce package Ocean Spray® Craisins® Original Sweetened Dried Cranberries
2/3 cup white chocolate chunks or chips
DIRECTIONS:

Preheat oven to 375ºF.

Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in sweetened dried cranberries and white chocolate chunks.

You probably have all the ingredients in your home and what is impressive is the fact it takes very little time to make these.

No Bake Cookies

2 cups white sugar
1/4 cup unsweetened cocoa powder
1/2 cup milk
1/2 cup margarine
1 teaspoon vanilla extract
1 pinch salt
1/2 cup chunky peanut butter
3 cups quick cooking oats

In a saucepan over medium heat, combine the sugar, cocoa, milk and margarine. Bring to a boil, stirring occasionally. Boil for 1 minute, then remove from heat and stir in the vanilla, salt, peanut butter and oats.
Drop by rounded spoonfuls onto waxed paper. Allow cookies to cool for at least 1 hour. Store in an airtight container

Theee best cookies ever---Here is the original recipe however, I omit the water (unless it is so dry that I can't make a ball, then I add a little) and I use Hershey speical dark chocolate chips in place of raisins. I use grated ginger and nutmeg too (from Penzey's). Also, the cinnamon I use is a Penzey's one called Vietnamese Cinnamon. It's a little hotter than your average ceylon cinnamon.

Ultimate Oatmeal Cookies

3/4 cup butter, softened
1 cup brown sugar, firmly packed
1/2 cup granulated sugar
1 large egg
1/4 cup water
1 teaspoon vanilla extract
1 cup flour
1 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon cloves
1 teaspoon ginger
3 cups quick oats
2 cups raisins

5 dozen cookies
Change to: dozen cookies US Metric

27 minutes 15 mins prep

Preheat oven to 350°F.
In a small bowl, sift flour, salt, baking soda, cinnamon, cloves, nutmeg, and ginger; set aside.
In a large mixing bowl, cream butter, granulated sugar, brown sugar, egg, water and vanilla extract.
Add dry ingredients to the creamed mixture; mix well.
Stir in quick oats and raisins.
Drop by well rounded teaspoonfuls onto a lightly greased baking sheet.
Bake for 10 - 12 minutes.
Cool on tray for 1 minute and move to wire rack to complete cooling.

I have a great recipe that is everything you're looking for - simple, delicious, visually appealing, and everyone loves them! I can't take too much credit since the recipe is the Barefoot Contessa's (from the Food Network) but I made her Thumbprint Cookies this past Christmas and they were a huge hit! Basically, they are shortbread cookies that have jam in the center (raspberry, apricot, whatever you like) - but these are even more yummy because they are rolled in coconut before they are baked. Just look on foodnetwork.com for the recipe - that's where I found it - and good luck!

Monster Cookies

12 eggs

3 pounds peanut butter

1 tablespoon corn syrup

3 cups white sugar

3 cups brown sugar

1 pound butter

1/2 teaspoon salt

1 tablespoon vanilla

2 cups flour

18 cups rolled oats

8 teaspoons baking soda

1 pound M&M plain candies

1 pound chocolate chips

Mix eggs, peanut butter, corn syrup, sugars and butter. Add salt, vanilla and mix.

Add flour, oats and baking soda and mix well. Add candy and chocolate chips. Drop by tablespoonful on ungreased cookie sheets. Flatten by fork.

Bake at 325 degrees for 12 minutes or until brown.

Makes 6 to 7 dozen.

Chocolate Covered Cherry Cookies

INGREDIENTS:
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup butter, room temperature
1 cup granulated sugar
1 egg
1 1/2 teaspoons vanilla
1 (10 ounce) jar maraschino cherries, drained, reserve juice
1 (6-ounce) package semisweet chocolate chips
1/2 cup sweetened condensed milk

PREPARATION:
In a large bowl, combine flour, cocoa powder, salt, baking powder and soda, blending well; set aside. In a mixing bowl, beat together butter or margarine and sugar on low speed until fluffy. Add egg and vanilla; beat well. Gradually add dry ingredients to the creamed mixture; beat until smooth and well blended. With hands, shape dough into 1-inch balls; place on ungreased baking sheet. Press down center of dough with thumb. Drain Maraschino cherries well, reserving juice. Place a cherry in the center indention of each cookie. In small saucepan combine chocolate pieces and sweetened condensed milk; heat over low heat until chocolate is melted. Stir in 1 tablespoon plus 1 teaspoon of the reserved cherry juice. Spoon about 1 teaspoon of the topping over each cherry, spreading to cover cherry. If frosting seems too thick, thin with a little more cherry juice. Bake at 350° for 10 minutes, or until done. Remove to wire rack to cool.
Makes 3 to 4 dozen cookies.

or hershey's macaroon cookies - these are the bomb!

you can also get the best oatmeal cookie recipe off of the lid of a package of quaker oats-add chocolate chips instead of raisins and you will be pleasantly surprised!

another good package recipe is on the REsees peanut butter chips package - it's a chocolate cookie with the PB chips - way yummy.

peanut butter

1 cup peanut butter
1 cup sugar
1 egg

mix together and form balls 1 inch or so. Press with the tines of a fork. Bake at 375* for about 8 minutes. You can double triple whatever the recipe. The are great and cheap
