A latte is steamed milk, a couple shots of espresso (depending on the size) light foam, and if you choose, any flavored syrup provided by the coffeehouse. A traditional cappuccino is half foam half steamed milk. Foam is basically fluffy aerated milk. Cappuccinos can also come with your favorite flavor. Then there's Frappuccinos which start with a coffee base and is blended with ice and your favorite flavoring(s). It is kinda like a blended coffee smoothie. Iced coffee is just brewed coffee brewed double strength on ice and you can once again add your favorite flavoring.

There are three main species of coffee plant :

Arabica : Most widely cultivated, rich in aromatic taste. Grown in South America, East Africa and Indonesia and makes up to 75% of coffee sold.

Robusta : Named after its taste, easier to grow than Arabica but flavour not as pleasant. It is blended with Arabica and is cheaper to buy.

Liberica : Toughest of all the plants and can be grown at sea level. It is often used for instant coffee blends.

If you mean instant coffees, like Nescafe, made to prepare at once...
They are of 3 kinds, acording to the quality and the way they're produced:
flour type
in granules
and in crystals (the best one)

Basically, what it boils down to is two key things..

First, the type of bean: Where it is grown, how it cultivated, etc.

Second, Roasting. Length of time, additives, flavoring (natural and artificial).

French roasted beans are roasted in the oven for longer periods of time, giving it that darker, richer flavor, with a hint of bitter, just for an example.
