I only use milk, butter and cheddar with a little salt and pepper. I've got about 2 pints left!

Yes ,,and when you reheat make sure you stir like buggery otherwise you'll have lumpy sauce.

I certainly do! I always deliberately make too much sauce so that I can freeze some for later.
I find pouring them into plastic cups and covering the top with cling film is the best way to store them (so you don't have to unfreeze it all at once). Frozen dairy based sauces should be used within 1 month.

Why not treat yourself with a Welsh Rarebit, with the cheese sauce tonight. Spread it over slices of bread and grill it. Apply some Worcestershire Sauce prior to grilling. Better than freezing.

I don't think it's good to freeze it but you can keep it refrigerated safely. By the book 3 days is the cutoff period but if your refrigerator is at home and keeps stuff really cold I wouldn't be afraid of it for 5 to 7 days. If it's in a restaurant the health department gives you 3 days.
