It actually does not always land butterside down. It is about 50/50. Myth busters did one on this and the butter made no difference on how it landed. We only think it always lands butter side down cause it has to be thrown out then.

Because you don't drop it, it slides off your hand, a plate or something else.

As it slides off, a slight rotation is induced in it's movement. Given the typical height of the table, it simply does not have sufficient time, given the force of gravity, to make a complete rotation.

If in fact, if it slides off a surface 5-6 feet high, then it won't land butter side down, but butter side up.
