I tried to make my own yogurt but at the top there was alot of this liquid, taking up more than half the volume, and then there was some thicker, yougurt type substance below.

What causes this?
What can I do about it?

Strain it through a very fine cloth...not muslim. Could try a cotton tea towel or similar. Important to use fine cotton material!

I make lots of yoghurt and it is always perfect. Two litres of UHT skimmed milk, (two litre cartons), heat in microwave in large jug to between 43 degrees and 49 degrees Centigrade. (Use thermometer.) Whisk in two tablespoons of plain yoghurt, any sort, and cover with teatowel and place in airing cupboard overnight or longer. Result...solidish yoghurt which can then be strained to desired thickness. Beat with a spoon after straining and refrigerate. Fantastic. Easy and very cheap.

I would strongly suggest investing in a yogurt maker. They are easy to use and inexpensive.

pour off the liquid and enjoy. next time use a full fat milk and there will be less water
