Tofu Pumpkin Pie
Ingredients
1 can (16 ounces) pureed pumpkin
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 package (10-12 ounces) silken/soft tofu, processed in blender until smooth
1 9-in unbaked vegan pie shell
Directions
Preheat oven to 425 F. Cream the pumpkin and sugar. Add salt, spices, and tofu, mix thoroughly. Pour mixture into pie shell and bake for 15 minutes. Lower heat to 350 F and bake for another 40 minutes. Chill and serve. Don't use the low fat tofu, then the pie tastes like it was made with tofu.
Easy Chocolate Fudge Tofu Pie
Ingredients
2 packages firm silken tofu
3/4 cup honey
3 teaspoons vanilla
1/2 cup cocoa powder
chocolate graham wafer pie crust
Directions
Drain as much liquid as possible from tofu by putting paper towels on top & bottom of tofu, wrapping a clean dish towel around that, and setting a weight on top of it [a large pan usually works well]. Drain for 30 minutes. In food processor[or blender], whip tofu until smooth, for several minutes. Add honey, cocoa powder,& vanilla. Blend for at least 1 minute. Be sure to use spatula on sides. Pour into pie crust& chill for 2 hours.
Garnish with bananas or raspberries, if desired.
Zucchini Tofu Pie
Directions
4 cups zucchini, thinly sliced
1 cup onions, chopped
1/4 cup olive oil
1 pound firm tofu
1/4 cup parsley, chopped
1 clove garlic or 1/4 tsp garlic powder
1/2 tsp oregano
1/2 tsp basil
1 tsp salt
2 eggs (optional)
1 cup shredded mozzarella cheese (optional)
9-inch pie crust
Directions
Saute zucchini and onions in oil until tender, set aside. Mix tofu, parsley, garlic, oregano, basil, salt, and eggs in blender until smooth. In bowl, combine tofu mixture with vegetables and shredded cheese. Pour mixture in pie crust. Bake 40 minutes in preheated oven at 375 degrees F. Serve hot or cold.

Aloha Chocolate Tofu Pie
Ingredients (use vegan versions):
1 bag of vegan chocolate chips
1 vegan graham cracker crust
1 8 or 10 oz. package of soft (silken) tofu
vanilla (2 teaspoon or more - lots is good!)
Directions:
Melt chocolate chips in double boiler or microwave. Put tofu in blender and blend until creamy. Add melted chocolate and vanilla. Blend all together until creamy. Taste to see if enough vanilla was used! Pour into graham cracker crust and set in fridge for a couple hours to chill.
Serve with a scoop of raspberry or cherry sorbet. (Or any other fav. flavour of sorbet)
Serves: 6 to 8.
Preparation time: 15 minutes

You can make it chocolate if you add a 1/2 cup cocoa powder to blend.
