What kind of spices do you use, what kind of liquid do you use? What temperature do you set the oven at?

The slow cooker is the way to go but if you must you must. First of all your corn beef should have come with a little packet of herbs! if not use whole 8 peppercorns, 6 coriander seed, 12-15 fennel seed and a clove. put em in the liquid whole. So first you have to brown it which is to sear it on high heat in a frying pan on all side till brown then place it into a roaster pan with a lid add liquid. I prefer chicken stock mixed with enough soy sauce to make it look dirty. Put enough in to come up the meat between 2" and half way. Now cook long and slow at low temp which is the braising part. 4-6hrs for most recipes at 250*f. Place raw uncut cabbage carrots onions and potatoes in the last hrs for a whole meal. You can quarter the cabbage just peel everything else. Hope this helped.

If you have a packaged corn beef, most likely it has a small seasoning pack included. I put the meat in a roaster, fatty side up, adding enough water to cover the bottom of the roaster. Sprinkle the season packet over the meat surface, cover and bake in a pre-heated oven. Cooking time will vary depending on the weight of your corned beef. Roughly bake 1/2 hour, plus 15 minutes per pound of meat.

If you don't have a spice packet you can use pickling spice about 1/2 tablespoon .

Here's the problem... In making a lovely brisket into corned beef, it is cured in a brine (saltwater and other stuff) solution. This brine changes the meat, making it saltier, and adding a good shelf life to the fresh beef. If you use a dry cooking method, the corned beef will be tough, and very, VERY salty! I would think it would be edible, but you probably wouldn't like it much. Stick to boiling or braising, and do so gently! It makes for a lovely and tender corned beef! Best wishes!

I dont really recommend cooking it in the oven, my favorite recipe is add some salt to boiling water to accelerate the boil, bring the corned beef into the pot and let cook, when done, put your favorite BBQ sauce all over it and place on the grill until crisp on the outside approximately 10-15 minutes depending on weight. Try that one!!!

It does great in a slow cooker, too. Sorry, I don't have a recipe. We used to just get the bagged corned beef with liquid and spices included, and drop it into the cooker. Best I've ever had.

I've always boiled mine. I've never heard of anyone cooking it in the oven.

You can braise it in the oven. Just make sure its covered with water
