For this recipe plantains have to be very ripe.

Slice them in halves. Put them in a pyrex with bits of butter and sprinkle brown sugar. Place in oven (350ºF) for 15 min.
You can use condensed milk instead of cinnamon and brown sugar. And add a dash of cognac before serving.

Here's a fried plantains recipe courtesy of Alton Brown:
2 cups water
3 cloves garlic, smashed
2 teaspoons kosher salt, plus extra for seasoning
1 1/2 cups vegetable or canola oil
2 green plantains
Combine water, garlic and salt in medium size glass bowl and set aside.
In a large (12-inch) saute pan, heat oil to 325 degrees F. Peel plantains and slice crosswise into 1-inch pieces. Carefully add plantains to oil and fry until golden yellow in color, about 1 to 1 1/2 minutes per side. (The oil should come halfway up the side of the plantain). With a spider or slotted spoon, remove the plantains from the pan and place them on a cookie sheet lined with parchment paper, standing them on their ends. With the back of a wide, wooden spatula, press each piece of plantain down to half its original size. Then place the plantains in the water and let soak for 1 minute. Remove and pat dry with a tea towel to remove excess water.
Bring oil back up to 325 degrees F and return plantains to pan and cook until golden brown, approximately 2 to 4 minutes per side. Remove to a dish lined with paper towels, and sprinkle with salt, if desired. Serve immediately.

Heres and easy way cut the plantains get a fryin pan and when the oil egt hot take your time and put them in there and when it start to change color you turn it and wait till that side brown then when its soft you crushed it and put in back in the pot to get crispy then you take it out and enjoy.(This is for green plantains)

Plantain Bananas are part of the typical food here in Costa Rica... I am not much into eating this type of food but I like it.... it's edible lol =)

i saw one way...make a plantain sandwich using plantains as the bread....very healthy, take the plantain and flatten it...then fry it up till golden brown the put whatever meat and veggies you want

Fry them as described, then make a sauce by mixing sour cream (we've switched to nonfat sour cream for health reasons, or you can use good nonfat yogurt) with cinnamon and a little brown sugar. Blend this with a spoon till it's smooth, then drizzle it over the fried platanos. Lo maximo!

Something you should know first - If you by plaintains when the outside is green, you will have a plaintain that's best used like a potato, however, if the outside is black (or you let the plaitain sit around until the outside turns black), you will have a much sweeter plaitain. Either way, they are both great pan fried, even though green plaintains are typically deep fried (Tostones).

You take the plantains and you wash them. Then you dry them and then you season them with some salt. Then, you fry them. You take them out, you flatten them and then you put them again in the oil-you refry them.
Then, you eat.

There are millions of ways. You can make many dishes with them, even cakes and deserts.
If they are ripe (blacken) you can slice them and fry them, you can put them in the oven, or cook them in water cut in half with the skin on (they are ready when the skin breaks).
If they are green you can make tostones which are very popular you slice them, fry them, smash them a bit and fry them again. add salt, ketchup or whatever you like.
