i cook butternut squash by, roasting them in honey or golden syrup, or sometimes put them in a pan with onions and add oil and add seaoning and herbs

1 butternut squash 1 clove garlic (optional) 1 tsp cinnamon Salt & crushed black pepper Preheat oven to 400 degrees. Using a sturdy knife, cut off the top of the butternut squash near the stem, then cut the butternut squash in half lengthwise. Scoop out seeds and membranes. Halve again, making four wedges. Place wedges cut side up in a large glass baking dish. Rub garlic on the surfaces. Sprinkle cinnamon, salt & pepper on top. Cover in foil and roast for 35 mins, remove foil & leave to brown for another 10. Scoup the flesh out and place in a soup pot with the garlic. Add enough water to cover, bring to a boil. Remove from heat & with a handheld blender blitz till smooth. Bring back to a boil, stirring often till it's your prefered consistency. Add salt & pepper to taste. Adding other ingredients overpowers the natural sweetness of the squash. The roasting brings out the sweetness. Try this as a base & if you don't like it, you can add more this and that. Personally, I think this simple recipe is great the way it is.

Butternut Squash and Apple Casserole
1 small butternut squash, about 2 pounds
2 apples, cored, peeled, sliced
1/2 cup brown sugar, firmly packed
1/4 cup cold butter
1 tablespoon flour
1 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
---------------------------
Peel squash, scoop out seeds, and cut in small pieces.
Place squash and apple slices in oblong baking dish (7x11-inch). Blend remaining ingredients with fork or pastry cutter until crumbly.
Distribute over squash and apple.
Cover and bake butternut squash casserole at 350° for about 45 to 50 minutes.
Butternut squash recipe serves 6 to 8.

This is the easiest, most tasty butternut squash recipie I know.
One butternut squash, peeled, scooped out, and cut into cubes.
2 cups of chicken stock (you can use bullion cubes too)
Steam cubed butternut squash in 2 Qt. pot using steamer. Use 2 cups of stock to steam for 12-15 min. or until squash when poked with fork is very soft.
Tranfer all of it to blender, (squash and stock) add 1/4 teaspoon salt, and a pinch of pepper. Puree until smooth.
This creates a fat free soup (unless you add butter) that resembles a cream soup! It is truly a meal and very tasty and CHEAP to make. TRY IT before you pick best answer!

3-Medium Butternut
½-Cup Onion – chopped fine
½ -Cup Bacon Bits (Real Bacon)
1-Tsp Garlic Salt
1-Tsp Normie
3-Cups Shredded cheese – divided (I use Mexican Blend)
Preheat oven to 375 degrees.
Quarter squash lengthwise then slice into 1/4” thick “moons”
In mixing bowl by hand stir up squash, bacon, onion seasoning and 2 cups cheese. Spray 9” X 3” round baking dish with Pam. Put mix in baking dish and top with remaining cup of cheese.
Bake uncovered at 375 degrees for 30 to 35 minutes.

Curry
Try this recipe, I used pumpkin and added chicken so you can add or takeaway ingredients to your tastes.
Ingredients
3 tbsp Vegetable Oil
1kg/2.2lb Pumpkin, peeled, deseeded and cut (or Butternut Squash) into large chunks.
2 Chicken Breasts cut into peices
1 Large Onion, chopped
1 Capsicum (Sweet Pepper) roughly chopped
3 Garlic Cloves, crushed
5cm/2 inches Fresh Root Ginger, chopped
Curry Paste to taste (check ingredient label)
Salt and Black Pepper
240ml/8fl.oz. Strong Vegetable Stock
Instructions
1. Heat the oil in a large saucepan. Add the chicken and lightly fry to seal it. Add the onion, red pepper, garlic and ginger and cook over a medium heat, stirring, until the onion is golden brown and softened.
2. Increase heat, add the curry paste and salt and cook for 1 minute then add the stock and pumpkin and bring to the boil.
3. Reduce the heat, cover and simmer for 30 minutes, stirring from time to time.

Try cutting the squash into cubes and marinating in a mix of olive oil and harrissa paste. Roast for 40 mins. Then put on top of a pre bought pizza base covered in tomato sauce along with crumbled goats cheese. Bake to brown cheese and eat!!
