Pink lemonade pie! It's great and it doesn't require any baking, plus it's low fat!

1 (14 ounce) can sweetened condensed milk
1 (6 ounce) can frozen pink lemonade concentrate, thawed
1 (8 ounce) container frozen whipped topping, thawed
2 (8 inch) prepared graham cracker crusts

In a large bowl, mix together sweetened condensed milk and lemonade concentrate. Fold in whipped topping. Pour into pie crusts. Refrigerate until completely chilled.

I don't know how old your daughter is, but any kid will enjoy this... (Work with me a minute here...)

FROM SCRATCH CHOCOLATE PUDDING.
Why?! It's like watching a magic show. Easy to make--they can stir the pot--with you right there--and when the milk and chocolate (and all the other ingredients) turn into pudding--it only takes a few seconds after the milk has reached a certain temp--it is MAGIC!

Prep Time:

INGREDIENTS:

* 1/2 cup white sugar
* 3 tablespoons unsweetened cocoa powder
* 1/4 cup cornstarch
* 1/8 teaspoon salt
* 2 3/4 cups milk
* 2 tablespoons margarine or butter
* 1 teaspoon vanilla extract

DIRECTIONS:

1. In a saucepan, stir together sugar, cocoa, cornstarch and salt. Place over medium heat, and stir in milk. Bring to a boil, and cook, stirring constantly, until mixture thickens enough to coat the back of a metal spoon. Remove from heat, and stir in margarine and vanilla. Let cool briefly, and serve warm, or chill in refrigerator until serving.

this is easy, not fattening and yummy.
Get an angel food cake and slice it horizontally.
Slice bananas, defrost a pkg of non=sweetened strawberries and if possible have some boysenberries.
Get a large tub of low fat dream whip... or more.
In a large bowl, your child can fold in the strawberries and watch it all turn pink.
then add the boysenberries and bananas.
Put in the fridge long enough for it to set pretty good.
Then take the bottom half of the angel cake and put a thick layer on top of it.
Then place the top of the cake on that and frost all around with the mixture.
There are many ways to decorate... fresh strawberries, choc syrup designs from a squeeze bottle, etc.

You can also make individual ones by cutting the cake in wedges, put on their side and make big pink balls.

Another fun yummy is to used sliced banana nut bread, put a slab of ice cream on it and cover with the creamy mixture and chocolate or berries.

You asked for simple. When I was little, this was a dessert that we had in our home at least once a week.
Get a box of graham crackers and a tub of frosting. Make "cookies" with two graham crackers that have been frosted and put together. Now that you can buy can frosting, it doesn't get any easier. My mom died when I was 8, so I was able to make this all by myself.

Another good and easy one: buy a package of ready-made pie crust. Put it on a cookie sheet. Spread with butter. Then sprinkle generously with cinnamon sugar. Bake in a 350 degree oven for about 10 min. or until golden and bubbly.
Or... after sprinkling the cinn/sugar on, roll it up and cut it into little "cookies". They'll look like little pinwheels. Put them on a cookie sheet and bake for about 10 min. (till golden) at 350. These are so good! You can even make your own pie crust if you want. Or use up leftover pie dough scraps.

Oh my the cutest thing! Anyhow, the best thing that a mom can make with her daughter is..."STRAWBERRY SHORTCAKE". If you do not have the beautiful time to make your own cake, then purchase a nice sponge or pound cake at your local bakery! It's so easy I don't even have to tell you what to do. Take those wonderful strawberries cut them, then add to a medium bowl. Add a little sugar...brown sugar is good, or you can use "Splenda" to cut down on the sugar calories. Stir sugar in, and you will see that a nice juice will form from the strawberries and sugar combination. Place strawberry mixture over sliced cake, add whipped cream, and you have yourself a delicious easy dessert. Add vanilla ice cream, and you really have a treat! ENjoy...yummy!
