I have two grandchildren that I am raising and they are almost 2 years old and almost 3 years old. I'll tell you what they like to do. They love to color, look at books, draw with a pencil,{it makes them feel big} they love to play with all size cars and trucks and they love playing with blocks. Also you can ask the 3 year old top read the 2 year old a book. I know that they don't know how to read but they will turn the pages and make up stuff. My 2 year old loves it when her brother reads to her even though he is just making it up.

at that age these children are typically not into "Group Play" they are at the stage of parallel play which means they will mimic, enjoy the same toys and traditionally take each others toys because they want to mimic what the other child is playing with.
The one year old will require the most amount of care while the three year old may require the most amount of your attention and the two year old will require the most amount of observation typically. That said, you do not need to be alone with three boys that age. Enlist a friend or parent to help. (I was quite the sitter at that age too, but i wouldn't take on three by my self not children that young)
Cars and trucks are probably the most appropriate thing, but play dough and crayons ( keep it away from the baby, typically not toxis but you try explaining the poop) might help if you need quiet activities. Also a modified version of twister can be fun too. (OK lets find the red circle. can we put our feet on the green and point to green card...

Put some water in a kiddy sized pool and throw some toys in there with them, even the baby would enjoy cooling off, of course you'd have to hold him/her.
Color with them, imagine with them...build a fort out of the couch cushions.
Have a puppet show with their favorite stuffed animals.
Teach them a song you loved to sing as a younger child.
Teach them to count by using their "piggies".
Let them lead the way...kids are so imaginative!

if they parents will provide it a say a plastic kiddy pool my 2 year old and 6 month old go in for over an hour each day and it makes them sleepy to so they nap after ..

ok all you have to do is stay near the baby to make nothing goes wrong with him or her then give the 2yr old and the 3yr old a game to play like hide and go seek or tag

you can always take them to the park or local pool. With their energy who knows they might even make up their own games. Oh and btw good luck
