I would love to try some of your unique chilli recipes!!! I am tired of making chilli the same way, beans, tomatoes, meat.... are there any other ingredients......please let me know!!! Thank you!

My beanless chili -

2-Pounds Ground Chuck
1-Pound Thin Steak (breakfast, round etc about ¼” thick) - Cubed
2-Cans Rotel Diced Tomatoes (Hot, Mild or Regular)
2-Cans Chicken Broth
2-Cans Beef Broth
1-Can Mushrooms stems & Pieces – With Liquid
2-Tbls Olive Oil
1- Medium Onion – Diced
1-Medium Green Pepper – Diced
5-Stems Celery - Diced
2-Tbls Chili Powder
2-Tsp Garlic Salt
1-Tsp Cumin

Put steak in freezer for about 15 minutes. It will cut easier. Slice into thin ¼” strips then cut crossways into ¼ inch cubes. In skillet brown ground beef & cubed beef, drain well. Add to pot with tomatoes, chicken broth, beef broth and mushrooms.

Wipe out skillet and add olive oil, onion, green pepper and celery. Sauté a few minutes until soft but do not brown. Dump in pot, add spices and simmer an hour or two.

Good adders are ½ cup real bacon bits.
A can of diced green chili’s.
Leftover hot dogs sliced into ¼” rounds

A good variation when serving is to put a tablespoon of diced onion topped with two or three tablespoons shredded cheese on top of each bowl.

My chicken chili -

1-Can Chicken Broth
1-Can Rotel Tomatoes
4-Cans Great Northern Beans
2-Cans Diced Tomatoes w/ onion & garlic
1-Tsp Cumin
1-Tsp minced garlic or two cloves fresh minced
¼-Tsp Black Pepper
1-Med Onion – Diced
3-Boneless Skinless Chicken Breasts


Place everything except chicken and onion in crock pot. Set on low (250). Spray skillet with Pam and sauté onion until transparent. Put onion in crock pot and sauté chicken until lightly browned on each side. Let cool a few minutes, then cut chicken into ½ inch cubes and add to crock pot. Continue cooking on low (250) six hours. Longer is even better as the flavor blends with additional cooking.

Ingredients:


4 lbs. fresh meat
1 tsp. black pepper
2 beers or 750ml zinfindel
1-3 tsps. oregano
2 Jalapeno peppers (chopped)
1 tbsp. cumin powder
2-4 tbsps. chili powder
1 tbsp. salt
4 cloves crushed garlic
1 16 oz. can Cantadina tomato sauce
1 tbsp. finely chopped green onions
2 tbsps. chopped bell pepper



(This is REAL Chili - - So, No... There Ain't No Beans !)




2 lbs. ground beef (chili grind)
1 lb. venison (chili grind) .. pork is ok
1 lb. ground Italian sausage
12 oz. Mexican chorrizo sausage


Mix all the meat in a large kettle. If using the "substitute" ingredients above, then cut open the chorrizo wrapping and squeeze out the contents into the mixture of the 4 lbs. of other meats. Brown the meat, stirring occasionally to mix well. Once the meat has browned, add the tomato sauce, beer (or wine) and all of the seasonings. It is a good idea at this early juncture to use only half of the chili pepper and oregano and reserve the rest until later so that you can season to your taste.


Cook over low-medium heat for 30 minutes, stirring occasionally to prevent sticking, then reduce heat to low and cover. Cook covered for 1 hour, stirring from time to time. Sample for taste, increase seasoning as desired, and cook on low for another hour, stirring occasionally.


Sample again and add additional cumin, chili pepper, oregano, Jalapenos or critters to suit your taste; turn off heat and place in the refrigerator over night. Reheat on the following day and serve. For an especially tasty presentation, serve up in bowls and sprinkle the top with chopped white onions and shredded Monterrey Jack and cheddar cheeses. Feeds 6 to 8. Enjoy!

TUSCAN WHITE BEAN CHILI

Ingredients:

1 1/3 cup chopped onion
3 large cloves garlic, minced or crushed
3/4 pound Italian sausage, chicken, turkey, or pork, remove casings, pinch into 3/4-inch pieces
1 tablespoon olive oil
1/4 cup white wine
1 can chicken broth (49 ounce)
2 cans white beans (do not drain) (15 ounce ea.)
2 cups sliced carrots (peeled, 1/8-inch slices)
1 cup sliced celery (remove strings, slice thin)
2 cups sliced mushrooms
1 (14.5 ounce) can diced peeled tomatoes, undrained
1 tablespoon dried basil (crush in hands to release flavor before adding)
1 cup uncooked pasta, such as penne, mostaccioli, farfalle, etc.
Shredded Parmesan cheese, for garnish

Directions:

In large pot, saute onion, garlic, and sausage with oil over medium heat until golden brown, stirring often. Add small amount of water if necessary. When onions are transparent and sausage is golden brown, add wine and stir, scraping any brown bits from bottom of pan. Cook for 5 minutes, stirring often, until wine is reduced. Add vegetables and rest of ingredients, except Parmesan cheese. Bring to a boil over medium-high heat, stirring often, then turn heat to low and cover pot. Simmer 20 minutes, stirring occasionally, until vegetables and pasta are cooked.

Taste chili and add pepper if necessary (go light on the salt until after the Parmesan has been added). Ladle into bowls and sprinkle liberal amounts of Parmesan cheese on top. Serve with warm French or sourdough bread.

This recipe for Tuscan White Bean Chili serves/makes 6.

Go get some nice cuts of top sirloin and cut them into cubes and grill them then add that to your chili, use your normal sauce and everything and beans but when you are about to serve it take some flour tortillas and slice them into strips and deep fry them and then put them on top of the chili with a little bit of cheese and sour cream and a dash of hot sauce and you will have THE best chili you have ever had, the tortillas add a little sweetness to it. :)

I always include Chopped Tomatos, Green Peppers and Onions, also try ground turkey instead of beef, it will make the whole meal less fattening.

Chili is a dish alone with crackers but, I do like raw onions in it also. I know onions are cooked in the chili but, I like extra chopped raw onion to put on top along with shredded cheese and crackers. Sometimes I LOVE Frito's corn chips and sour cream along with shredded cheese. Stewie's answers underneath mine is right; I forgot about fried potatoes!. I bake tater tots in the oven and top them with chili, cheese, sour cream, and green onions sometimes for my little cousins when I baby sit and it's delicious! A fast food chain here in the U.S.A. named Sonics Drive-In has chili cheese tater tots as a menu item and they're tasty.

You could add cheese to the mix, but also, adding things the finished product is good too. Sour cream, jalapenos, cheese on top, scallions, etc.
We do a version with turkey that's pretty good.

try putting sausage in. or make what my grandmother calls chilli soup, its not quite as thick as regular chilli and it has spagetti noodles in it (sorry, don't know the recipe for it though).

That might explain why you are tired of your chili. You may not believe this but most people add spice to their chili. I personally add cumin, mustard , sage, salt,black pepper, red pepper ,white pepper, red wine vinegar,jalapeno peppers, hot banana peppers, bell peppers,onions,and of course eight shakes of worstisire sauce.

of course, peprica, peppers, and we add vienna sausage or kielbasa both are great, oh and add some spices that will heat it up! good luck and good eating.
