Like others have answered, knowledge of anatomy and physiology is important for targeting--knowing where to hit and how to cause appropriate pain and/or damage, but there's also more to it.
The more you know about anatomy and physiology, the better you will be able to train and coach as well as deal with injuries (which will happen in the martial arts, at least if you're doing it right). If you know how your body works, you will get a better idea of how you should train and how you should not (e.g. what will cause your body more harm than good). This will also help you to train others if you are an instructor. Also, knowing your body will allow you to know how to avoid injuries and to deal with them effectively if they occur.

Since I was 8. I'm now 34 and I've studied a few arts in that time, mainly Shotokan Karate, (which I gave up when I was 15) muay thai, Jeet Kune Do Concepts, but my passion is the Fillipino Martial Arts. I hold a black belt in Doce Pares Eskrima and I'm a group leader in Dog Brothers Martial Arts.

It's very much a good base your pressure points are senors to your nervous system so if your taged in those spots with enough force your hurt. If Martial arts didn't know this you pretty much hitting with out direction or purpose.

Extremely useful - by understanding the human body and how it works, you are better equipped to deliver more damage to your opponent ... or help take care of a family member or friend in case they are hurt (part of my training included martial arts healing and reflexology).
Knowing how the body operates is fundamental in knowing your limits and then breaking them by physical and mental exercise.

Extremely important.
Knowing the physiology of the human body will let you know it weaknesses. If you know the true bunki to most Kata's they rely on Kyusho, Dim mak or tuite pressure points on the body to defeat your opponent quickly and easily. I suggest you go to

VERY. Martial arts involves uses of striking and movements.(duh lol). They can help you find those certain pressure points if needed due to problems that talking cant get you out of.

knowing anatomy will help alot as in fights u hav an advantage if u hav a knowledge about pressure points. u can even make a person twice ur size helpless if u knw fatal pressure points.
there r great martial artists who dont even move much in fightin. they jus tap their opponent on dim-muk points.
