actually eat beets all year round i love beets, they are healthy for you and i suppose it adds some colour to the salads?

Well to be honest you must be from the north b/c I've never had a beetroot in my salad.

i eat beetroot as often as my mom makes it,..we slavic people love beetroot soup also called "barshcht" or grated beetroot seasoned with horseradish etc.
