There are TONS of things you can make with veggies instead of meat...
enchiladas - any type of veggie works (i use spinach, tomato or corn and black beans)
lasagna - throw in slices of squash and layers of spinach, tomatoes in between cheese layers
Stir fry - use any Asian veggies with sauce on top of noodles or rice
pasta - tons of dishes are without meat - pasta primavera, tomato-basil, regular tomato sauce with mush, spinach, onion, broccoli
veggie skewers on the BBQ - any combo of veggies OK, make sure to marinate them!
tacos - substitute beans or blackened mushrooms for meat
I could go on for days...

I have found that if you take vegetables such as broccoli, brussel sprouts, couliflower, green beans, and some other make a great substitute for common chicken dishes. For example, I love chicken parmegiana. Even though it sounds weird make broccoli parmegiana. Also you could put any of these veggies in a casserole dish, add breadcrumbs and top with a little garlic, lemon, butter, and salt and it makes a pretty filling dish. I like to create weird things so hopefully these are interesting to you!

Ummm try some butter nut squash and acorn squash.. My dad is a chef and he just gave me this recipe:
take butternut squash and acorn squash and peel them like a potato, then cut them into tiny squares and put them in a bowl, take some olive oil and just pit some over it just enough were they are well coated. Then put them on a cookie sheet and sprinkle tyhme, oregano, basil on them and top off with Parmesan cheese and bake for 20 mins at 10 mins turn over and top with more Parmesan cheese, Omg!!! it is sooo good and very healthy for you, tastes like fried potatoes without the calories too! Yummy!!! I hope u enjoy!!!

Both are good for you, each fruit/vegetable has different vitamins. And so as more variety, as better. Vegetables have generally less sugar than fruits.

Veggie Stir Fry's are quick, easy and nutritious. You can mix and match the veggies you like to eat. Broccoli, cauliflower, zucchini, chinese pea pods, green beans, corn....you name it.

umm...how about veggie soup, u put like onions, celery, carrot, whatnot and u jst make a thick soup, u could also do the fake chciken dumpling thing, make doughs with flour and rolled into balls coocked in the soup, try it, i saw it on food network xD
