i have a problem with the most of the lemon dishes we make in our hotel, It has a metal after taste. Can any1 tell me why?

That's because the tart mixture was made in either a steel mixing bowl or cooked in a steel pot. Lemon (citric acid) leeches out the metals in the bowl or the pan. This is a very common problem in the food industry (I should know). Most often it's due to the fact that the lemon mixture was either cooked at too high a temp or too long or it was held in a metal bowl before being placed in the tart.

One way to tell is to look and see if the tart has a slightly grey color tinge to it.

Are you mixing the batter using the mixer and its aluminum bowl?
You probably are tasting the reaction of the lemon with the metal. Try using a plastic bucket to mix the batter in, should take the metal taste away. A lot of people don't know this!

This is a reaction between the acid in the lemon and the metal.
