Mostly Iraqi Arabic, but there are also speakers of many other languages including Kurdish, neo-Aramaic, Farsi, and some languages from the Caucasus mountains. Ethnologue lists over 20 languages.

They speak Arabic, specifically Eastern Arabic. In the Kurdish North they speak Kurdish.

It depends on the region. The Muslims speak Urdu but most Iraqis speak one of the bajillion forms of Arabic.
