Jarlsberg cheese is a mild, Swiss Emmentaler-style, cow's-milk cheese that has large irregular holes. It comes from Norway and has a yellow-wax rind and a semifirm yellow interior. The texture is buttery and rich, and the flavor is mild and slightly sweet. It is an all-purpose cheese, good both for cooking and for eating as a snack. It tastes kind of nutty.

Jarlsberg is not made on small farms in rural communities, but rather is created in a laboratory setting through a multi-stage, high-tech manufacturing process. The special bacteria that give the cheese its famous wide-eye holes and its sugary sweet flavor are cultivated in a controlled environment and added to the curd midway through the cheesemaking process. The result is a beautiful and delicious 20 pound wheel that defines the baby swiss category of cheeses. Jarlsberg was a county established in 1673 by Peter Griffenfeld. It is located in the central and northernmost part of Norway. In 1918 the name was changed to Vestfold.
