A great thing to have is some grilled pizza topped with fresh veggies. Takes just a few minutes and you have great pizza. I'd check out sites like marthastewart.com or other recipe sites for some good eats!
A quick and yummy dessert would be a strawberry/ or whatever berry shortcake is always good.
Fresh cut up fruit is good too

Different type of coleslaw for a change.
Great for the summer, no mayonaise.
FUMI SALAD
8 tablespoons almonds - slivered - toasted
8 tablespoons sesame seeds - toasted
1 head of cabbage -shredded
6 green onions - sliced
4 tablespoons sugar
2 teaspoons salt
1 teaspoon pepper
2 tablespoons Accent Seasoning
6 tablespoons rice vinegar
3/4 cup salad oil
2 packages of Top Ramen
(NOODLES ONLY - crumbled)
Toast nuts and seeds in a heavy skillet on top the stove. Heat slowly over low heat, shaking the pan like you would for popcorn. Cook until slightly browned. Takes about 10 minutes. Set aside to cool. Shred cabbage and slice onions; mix together in bowl. Combine sugar, salt, pepper and Accent Seasoning together and drudge into cabbage. Mix vinegar and oil together adding to cabbage and stir. Crumble Ramen noodles adding to cabbage along with the nuts and seeds. Stir. Refrigerate.

I really like smoothies. Gotta have smoothies during the summer. I make mine by blending 1/2 c mixed frozen berries, 1/2 c frozen strawberries, 2 peeled kiwis, about 1 c milk, 2 tbsp wheat germ, 1 tsp fresh ginger. Voila! I like to use soy milk in mine, particularly Silk Soy milk Enhanced. Makes it nice and nutritious. And you don't even have to use this particular combination of fruit. I've also used frozen raspberries, 1 frozen banana, and pineapple. Just keep the measurements the same.

This is easy and it is a summer dessert -not exactly light but hey, who's gonna know?
ICE CREAM COOKIE DESSERT
1 15-oz pkg chocolate sandwich cookie crumbs
1/3 cup melted butter
1 quart softened vanilla ice cream
1 8-oz frozen whipped topping, softened slightly
Chopped pecans if desired
Chocolate syrup if desired
In a bowl, combine cookie crumbs and butter. Press half into an 8-inch square dish. Spread with ice cream. Press remaining cookie crumb mixture on top of ice cream. Spread with whipped topping. Sprinkle with pecans if desired. Serve with chocolate syrup.

Spinach and Strawberry Salad
1 bag of baby spinach
fresh strawberries
sunflower seeds
poppy seed dressing
Wash the spinach and put in a bowl. Slice about 10 - 15 strawberries and put in the bowl with the spinach. Put about a tablespoon of sunflower seeds in. Add dressing to your liking.

Sandwiches are always good, and fresh, healthy- just don't fry them in butter or something. Lots of fresh fruits and vegetables... just put any fruits you like in a bowl and call it "fruit salad". Barbeque chicken is delicious, summer squash is so tasty... Search around online and you'll find tons of great stuff... you won't miss the french fries... trust me!

I just love iceys and stuff... just add coke or your favorite drink and some ice in a blender and blend!
I also love fruit such as peaches, plums, nectarines, grapes, cherries, pears, and more.
And of course, water. I especially love water because you dont need to make it... it comes built in with our planet!
I'm a simple eater when it comes to summer lounging.

Pita pockets. You can put anything in there. Try turkey and avocado. Lettuce, spinach, snow peas, chicken, sliced bell peppers, bean sprouts, etc. I used to live on them and they're delicious. You can eat them hot or cold. They have fiber too.
