Yes I believe she is your second cousin, but it is nice to see that you are showing respect to one of your elders by using Auntie, not many people bother these days.

She is your 1st cousin once removed. Depending on your relationship with her (& your age difference), you can call her "Aunt Jackie" or just "Jackie" - If she is your father's age and you have always called her Aunt & that's what the other "kids" (your siblings) call her, out of respect, I'd continue to call her Aunt Jackie. Ultimately, it's whatever you are more comfortable with. Some of mine, I call Aunt or Uncle and some I don't....

He is your second cousin. Unless you call your cousins by an official title, it is generally acceptable to use his name.

After all, "Second Cousin Bob" just doesn't sound that familial.

Update:

And by the way, first cousin once removed would by the child of your first cousin, however you would be their second cousin. I think.

She is your first cousin once removed, her children would be your second cousins. Since she is a type of cousin rather than an aunt, it might be more appropriate to address her by her first name, but you could always ask her or your parents if they agreed.

He/She is your second cousin. Because you have the same Great grand parents (ie your dad's cousin) your third cousin would be your fathers second cousin or your great great uncle/aunts child and you would share greatgreat grandparents. I hope that makes sense!!

Your father's first cousin is your first cousin once removed. What you actually call him is a matter of personal choice.

Your father's cousin is your second cousin. If your family has a custom, use that. Otherwise, call him or her by name.

Well in Hawai'i its a custom to call anyone that is older than you UNCLE OR AUNTY whether or not they are related to you it don't matter. But if you want you can address him/her as your cousin if you want. That's totally up to you.
