Dont know but head cheese so !#$@%* nasty...ugh

Because they used to boil the pig's head to get the meat. They'd pick the head of meat after boiling. The skull bone would render a good deal of gelatin, so the "cheese" would form up into a glutenous mass of jiggly pork products to spread a top a cracker.

Sounds delicious.
