Tuna Souffle
Yield: 4 Servings

1/2 cup mayonnaise
1/4 tsp garlic salt
1/3 tsp pepper
4 tbsp flour
4 tbsp milk
1 1/4 cups flaked tuna, drained
4 egg whites, well beaten
1 pinch of thyme
Parmesan cheese

Mix together the first 4 ingredients; slowly add milk; then tuna. Fold in beaten egg whites, then thyme. Pour into a well-buttered 2 quart souffle dish. Sprinkle with Parmesan cheese. Bake at 350F for 45 minutes.

1/4 C butter 2 C milk 1/3 C flour 1 1/2 tsp. salt 4 eggs
1 1 lb can tuna, (seperated)
Melt butter in double boiler,blend flour,add salt and milk, cook over direct heat stirring constantly until sauce thickens and boils. beat in egg yolks stir for 2 min and remove from heat.drain tuna flake fish, beat egg whites til stiff and fold until thoroughly into mixture. pour into well buttered 6 cup cassarole dish bake 325 F 1 hour
