You can not find the Underwood’s any more and I really to like their Sauce.
Secrets in the sauce ,or so i have been told

I am gonna tell a few; Mexican BBQ Sauce (Green): Garlic 5 cloves Green corriender 1 bunch (125gm) Greeb mint leaves 1 Bunch (125gm) Green capsicun chilly 250gms Salt to taste Vinegar 1 teacup Add ingredients to your blender and blend finely, this BBQ sauce is my favorite. Italian BBQ Sauce; Red chilly whole 250gms Garlic 8 cloves Tomato puree 125gms Salt to taste Blend finely, add water when serve. My Special BBQ Sauce' Mix both sauces mentioned above ;)

I don't know the recipe but you can go to the ONLY Underwood's BBQ left and maybe they will give it to you. It is in Brownwood, TX. I was there last month and they are still serving great BBQ!

Here is the recipe for Potato Salad Underwood's Cafe to go with the BBQ sauce.


Potato Salad

2 kg potatoes
1 cup mayonnaise
1/2 cup French dressing
1 bunch parsley
4 spring onions (otherwise known as green onions or shallots)
salt and pepper
1. Peel and cube the potatoes.
2. Bring plenty of salted water to the boil and cook the potatoes until tender.
3. While the potatoes are cooking, combine the mayonnaise, french dressing, finely chopped parsley, finely chopped spring onions and salt& pepper to taste in a large bowl.
4. Drain the cooked potatoes and cover with the dressing while hot.
5. Chill in the refridgerator, then serve and enjoy!

I don't believe I've ever heard of that one. I use Open Pit myself and like it because you can add additional things to it without running the initial flavor. Practice doing that yourself and you'll develop a sauce that you'll love and enjoy more.
