When you look at a cut of meat, and there are thin white lines throughout the meat that look like what marble looks like (hence "marbling") that is marbling. They say that marbling makes the steak taste better. It really has nothing to do with cooking it, it has to do with choosing the meat you want to buy.

Steak Marbling

If you go to the supermarket and look at all the different types of beef cuts, you will see that some cuts have more white streaks of fat embedded within the actual "meaty" portion of the flesh than do other cuts. A cut that has streaks of fat is considered to be "marbled".

From what I understand, many people prefer the marbled varieties. They prefer it, I suppose, because with the fat being embedded within the cut (instead of being lopped all on the side) the meat remains (more) tender as it's being cooked.

I, myself, don't like all that fat in the meat. So it's all in personal preference. Hope this helps.

Marbling is the white fat that is "marbled" threw out the meat. This is what gives the meat flavor and keeps it from being dry as you cook it. Hope this helps and it sounds like dinner is going to be good at your house tonight!

What is "marbling" in terms of cooking a steak?

Marbling is the texture of the meat with the "fat" that is part of the steak. All meat needs some fat to give it flavor and the right steak will have some fat in the cut of meat to help bring out the taste.

That is the fine lines of fat, marbling is important to get a great tasting steak. Lots of marbling means lots of flavor. A good steak is not intended for people who are monitoring their fat intake! Nothing better than beef fat! MMMMMM

Marbiling is the fat that is intertwined with the meat. Rib eyes typically have the best marbling. Next time at the grocery look at a rib eye and a NY Strip and notice the difference. The rib eye will have more marbling, and thus, more flavor.

Marbled meat is meat, especially red meat, which contains a large amount of intramuscular fat, giving it an appearance similar to marble. It is prized by many (including the USDA) for its high fat content, and derided by many others for the same reason.

Marbling is the tasty fat in the steak. It melts at high temperatures, and is considered a sign of quality.
