I'm making blackened fish tacos for my husband's birthday this weekend, but I'm unsure what to make to go with it. I think maybe a grilled corn salad, anyone got any other suggestions?

you would want something (clean) meaning like thinly sliced cucumber with fresh lemonjuice loi and red pepper flakes lightly dressed and tossed.

A Roman/Spinach Salad with Raspberry Walnut vinaigrette, crumbled blue cheese, chopped walnuts and sliced strawberries would be good with your fish tacos ... and it's easy. Ken's Steak House makes a delicious Raspberry Walnut Vinaigrette. It's also very colorful so it would make your presentation more pleasing to the eye.

Title: Layered Bean Dip
Categories: appetizers
Yield: 8 servings

1/4 c sour cream
1/4 c mayonnaise
1/2 pk taco seasoning
10 1/2 oz bean dip or refried beans
2 ea medium avocados, mashed
1/2 c cheddar cheese, grated
1/2 c jack cheese, grated
4 ea green onions, chopped
4 3/16 oz chopped ripe olives
3 ea tomatoes, diced
2 ea bags tortilla chips

Mix together sour cream, mayonnaise and taco seasoning. Set aside.
Use a 9" or 10" pie pan or disposable aluminum pizza pan. Spread a
layer of bean dip or refried beans on bottom of pan. Spread avocados
over beans in an even layer. Spread sour cream mixture on top.
Sprinkle on grated cheddar and grated jack cheese, followed by a
layer of olives and a layer of tomatoes. Refrigerate at least 1 hour
before serving. Serve with bowls of tortilla chips. Serves 8.

Cross between guacamole and pureed beans, with a spicy flavor provided by cilies, garlic and onion. Equal adds a hint of sweetness to round out the flavor.


Mexican Bean Dip

1 (15-ounce) can red kidney beans, rinsed and drained
1 medium avocado, chopped
2 tablespoons lemon juice
2 tablespoons tomato paste
1 red chili, finely chopped (optional)
2 cloves garlic, minced
1 tablespoon Equal® Spoonful*
1 green onion, sliced
1/4 cup chopped parsley, divided use
Place kidney beans, avocado, lemon juice, tomato paste, chili, garlic and Equal® in food processor; cover. Process until well blended.
Stir in green onion and 3 tablespoons parsley. Sprinkle with remaining parsley.
Makes 14 servings.

Make some spicy cabbage type of cole slaw. The grill ed corn salad is probably a good idea. You could also have some guac and chips, or do authentic refried beans, not canned.
