Much like a bundt cake the hole in the middle allows for faster cooking at higher temperatures. Without the hole it would be difficult to get the inside good and done without overcooking the outside.

Bakers believe that the doughnuts would not be fully cooked without the holes in the centers. The hole also makes it much easier to grip the cake, allowing you to multi-task a bit.

Some of them don't because they need room to carry the filling.

Because a long time ago, the Dutch were frying their pastries and they were coming out un-cooked in the middle. So they cut the middles out.
