soda makes the cookies raise when you bake them... if you leave it out they will be like a brick. (you can replace half as much baking powder if you have that.

You will have flat funny tasting cookies. You really should get the baking soda. They turn out better with the baking soda instead of baking powder although that can be a substitute. Baking really is a science, you should follow the recipe to the letter and only use appropriate recommended substitutions when absolutely necessary.

If you don't have baking soda or baking powder if there's no chocolate in the recipe, your food won't rise and they will be flat and hard. It's a pretty common and cheap item to have around, so I recommend getting some. It's an essential item to have in your pantry.

Baking soda is a leavening agent...it makes them rise. If you don't use it, your cookies will be flat and sorta hard.
Unfortunately, you can't substitute anything for it. Many people think you can use baking powder, but this isn't true. Baking soda neutralizes acid in foods...baking powder does not.

soda and powder are both leavening agents with out them the product will not rise, because of the diferenmt way they work one can not be substituted for the other.
both are not expensive so you might want to get some.
