Basic Pizza Dough
1 1/2 teaspoons active dry yeast
1 1/2 cups warm water (110F-115F)
3 1/2 to 3 3/4 cups King Arthur Unbleached All-Purpose Flour
1/2 teaspoon salt
1 teaspoon Colavita Extra-Virgin Olive Oil
In a large bowl, dissolve the yeast in 1/2-cup warm water. Allow the yeast to proof until it is foamy, about 10 minutes.
Add the remaining 1-cup of warm water, combining it well with the yeast. Add 3 cups of the flour and the salt. Mix the dough with your hands or use a mixer with a dough hook, adding the remaining flour as needed to make dough that holds together.
Place the dough on a floured surface and knead it for about 10 minutes, or until the dough is soft and not sticky. Grease a bowl with the olive oil. Put the dough in the bowl and turn a few times to coat with the oil. Cover the bowl tightly with plastic wrap and let it rise for 2 hours in a warm place.
Punch down the dough and knead it for a few minutes on a lightly floured surface. Use the dough to make one large thick pizza or divide it in half to make two small ones.

I have a bread machine, and a recipe book came with it. I use the recipe in that book to use the bread machine to make my pizza dough. Makes a wonderful pizza.

Pizza Hut Original Pan Pizza Dough
1-1/3 cups warm water (105 degrees F)
1/4 cup nonfat dry milk
1/2 teaspoon salt
4 cups flour
1 tablespoon granulated sugar
1 package dry yeast
2 tablespoons vegetable oil (for dough)
9 ounces vegetable oil (3 ounces per pan)
Butter flavored Pam
Put yeast, sugar, salt, and dry milk in a large (2 quart.) bowl. Add water and stir to mix well. Allow to sit for two minutes. Add oil and stir again. Add flour and stir until dough forms and flour is absorbed. Turn out on to a flat surface and knead for about 10 minutes.
Divide dough into three balls. In three 9-inch cake pans, put 3 ounces of oil in each making sure it is spread evenly. Using a rolling pin, roll out each dough ball to about a 9-inch circle. Place in cake pans.
Spray the outer edge of dough with Pam. Cover with a plate. Place in warm area and allow to rise for 1 to 1-1/2 hours.

if you have a bread machine then you can make dough in it, and it comes out great, we do it all the time, Saturday night is pizza night.

you can just buy the mixes...they are rather cheap. But if I'm out and my kids ask for it, you can use canned biscuits, or Bisquick.
If you make the combo of flour water and salt, cover it it and let it sit on the warm stove for about 5 mins after mixing, then sprinkle it and the pan with more flour/veg oil so it doesn't stick to your fingers.

the trick to a good pizza crust is high gluten flour... and most bread machine flours are high gluten... seriously just ask alton brown from food network... he did a feature on it the other day... look up his exact recipe... i know he is anal but he's gets it right every time.

yes i work at pizza hut. and they use different dough for each pizza different for pan different for thin crust, different for 3'cheese different for stuff crust, but the dough is pizza brand and it is supplied by company.

i used to use Bisquick - the recipe is on the box. tastes different than real pizza dough, but we loved it!
