I would still hire a server, just so that you and your guests don't have to serve yourselves and that way there is someone there paid to clean up, so they will.
I would offer light, sweet summery wines and light beer.
And what do you mean by BBQ? It means something different in the south and north.
If you're having honest to goodness BBQ, make sure the servings are smaller and less messy. Nobody wants to stain themselves in their best clothing!
Either way, I'd make the servings smaller than normal, "finger food"-esque. Like bite sized hot dogs/hamburgers. It sounds so casual but a good chef can make them look brilliant and elegant.
I would also suggest a fruit/vegetable tray and a cheese tray. And everything set out a la buffet style.
And remember, it's your big day. Yes, you want the guests to be happy but when it boils down to it, make sure you are 100% happy with your choice!

I'm from Texas, so every wedding I've ever been to was BBQ. And really, that's cheaper, so there's more of it. My cousin had a sit-down dinner (very pretty and tasted great) but there really wasn't enough food. But it depends on where you're from. Some people think BBQ is tacky for a wedding. But if it's a small gathering with close friends and family, I think people will be happier with the BBQ.

I would want something that represented the couple. I LOVE the casual BBQ type wedding, but if you are not that type of couple, it would seem odd. If you are a fancy dinners and fancy restaurants, then go that way. My man and I are thinking about serving recreations from our 1st date. Memorable to us....Maybe do something similar...1st date, proposal dinner, etc.

You will never please everyone. Try to picture the majority of your family and friends (and usually you have the same tastes). Are the majority of your guests in a social class that likes the sit down elegant dinner (which is also a lot more costly) or would they feel more confortable with a buffet style bbq?

if you're going casual there's nothing that people like more than a pig roast! most companies will do all the work for you and only charge $5-$8 a head. that includes about 3 different sides and plastic wear!
much better than fancy looking/crappy tasting reception hall food!

BBQ! thats what I am doing at my house. A keg or two of beer and a bunch of foo foo drinks for me and the girls. Buffet style, having a good friend serve/refill etc. We are also having cocktail shrimp, just becasue we love shrimp! Kind of a weird combo, but I don't care its our day!!!!

The food should be elegant, and served, you can have italian, mexican, Indian food is very exotic and tasty, or something buffet style so people can have a variety.
