I make bread sometimes. I enjoy doing it by hand, none of that bread machine crap. My white and focaccia breads always comes out nice, but the wheat always seems to fall apart when I cut it; a lot of crumbs. What can I do to fix this? I use the recipe from the Good Housekeeping cookbook (12th edition, the big red checkered cookbook).

I do lots of bread baking as well.
What I have found is to use mollasses or honey instead of white/brown sugar.
Another thing to try, is for your liquid, try using yogurt. And for more flavor, fruit flavored yogurt.

I don't have that cookbook, so I can't look it up.

Whole wheat flour is very low in gluten, the protein that gives bread its texture. Be sure you are using 1/3 to 1/2 of the total volume of flour as white/bread flour, not all whole wheat. You also need to knead a little longer to develop the gluten in wheat breads.

what you need to do is add a little bit more fat product..
this will also increase the liquid content of the bread..so the next time add a little more and see how it comes out..if it is a little better add a little more the time after that..
and then you can add just a little bit of liquid the third time if you feel you have enough fat added to the bread..but you are going to have to increase it a little at a time so you can see what works for you...
do not forget to write down the new amount each time so you can determine what works..

make sure that you are only using 20% Whole wheat flour in your recipe. That means you want 80% to be high gluten flour or bread flour and the other 20% whole wheat.

You might need to add more fat and perhaps a bit more liquid as wheat bread tends to be drier than white bread.

I heard that it means it's too dry. Try adding more of the liquids listed in the recipe.

your bread may of cooked too long and it got dried out
