The stimulation of urination sensation comes from association. We have been conditioned by our environment to associate the sound of water with water and then water with urination. Countless generations before us have done the same thing which passes down genetic dispositions toward acquiring the same response from our environment

I think that water dripping or running reminds you that you have to go to pee. I think you had to all along, but you just didn't notice it until you heard the water, Obviously, leaking water sounds like pee. You are also reminded that you haven't been to the bathroom in a while, that you just drank a lot of water, etc. This all makes you want to go to the bathroom.
