INGREDIENTS:
3 cloves garlic, crushed
3 small onions, minced
1 slice fresh ginger root
5 tablespoons curry powder
5 tablespoons water
2 tablespoons olive oil
1 cup yogurt
1 cup coconut milk
1 cup milk
1 cup water
2 large potatoes, cubed
1 (4 pound) whole chicken, cut into 8 pieces
salt to taste

DIRECTIONS:
In a small bowl, grind together garlic, onion and ginger. In a separate small bowl, mix together curry powder and 5 tablespoons water.
Heat oil in a large skillet over medium high heat. Saute garlic, ginger and onion until browned; add curry paste and saute together until smell is strong and fragrant.
Add yogurt, coconut milk and regular milk along with 1 cup of water, and stir all together. Then add potatoes and chicken and bring to a boil; reduce heat and simmer until potatoes are tender and chicken is cooked through, about 20 to 25 minutes.
Season with salt to taste and simmer for another 2 minutes; the curry is ready!

Coconut, PIneapple and chicken curry is gorgeous.
4 chicken breats fillets cut into chucks
2 tbsp turmeric
1 lemongrass, flattened and bruised
2 tbsp curry powder
bunch of corriander
tin of coconut milk
tin of pineapple chucks (which juice)
2 tbsp desicated coconut
Fry the spices in a little oil and then fry off the chicken chunks until browned. add the coconut milk, lemon grass, pineapple chucks and juice and desictaed coconut and simmer for about 1/2 hour. remove the lemon grass and stir in the finely chopped corriander.
You can actually more of less of whatever you want, it still tastes yummy. I actually lost the recipe for this and so have made loads of versions of it using different quantities of ingredients and it always takes beautiful. Is almost like a Korma taste. Serve with turmeric rice (boil your rise normally and but add a tsp of turmeric while it coming up o the boil and stir in).

Indian Curry: This can be made with beef/chicken or lamb.
1 lg onion sauteed in large pot then add
cubed beef and brown, add
salt & pepper, masala, curry leaves, 2tsp garlic and ginger, curry powder 2 tbls or more according to your taste,(1chilli if you like it hotter) ,+- 5 cloves, 1 beef cube stock, then add a large can of onion/tomatoe mix, (any type will do)
add about 3-4 potatoes cubed
stir and let simmer till beef and potatoes are tender.
serve with rice, bananas and salsa.
The earlier you make it in the day the better it will be, I make mine the day before so the spices have time to mature.

depending on how hot u want it i use paste pakats its an idian paste i use vindaloo. chicken or beef fry ur meat 1st in chilli fused olive oil or the plain if preferd add onions fry on a medium heat till cooked..take off heat & add paste chillies garlic oxo cube any spices that u ave or want to add then add boiled water till u have enuf add gravy granules alittle at a time till u get the thickness u want add mushrooms & any other bits that u want in ur curry.simmer away on a low heat stirring now n then.always taste better the next day

Dhal is delicious (especially when my mother-in-law makes it) - very cheap, quick and nutritious (make it wil lentils rather than chick peas for extra-niceness). Also have you tried paneer - it's an Indian cheese and is delicious when cooked with spinach (or even better with loads of chillis!).
