Sadly, There's more that she can't eat than what she can. I found this list of High potassuim items to avoid. below is the list. also the link below might help you help her it helps plan what to eat when she is on dialysis. Its really important that she has help because its such a struggle at any age let alone at 70. My grandma had the same problem and it was hard to get her to eat well unless we worked with her to plan her meals and made sure she followed the plans. Its so frustrating for them.
Anyway, here is the list here is the list of donts. but keep in mind that you should talk to her doctors also if you can. They might be able to help her by getting her a nutritionist that can help guide you both with recipes and practical tips. There are support groups sometimes at hospitals also that help to join because then you can get first hand what has worked for the people who are living it and many times the groups are free to attend. Below is a couple of links to the national kidney foundation also. one is their main page and the other is the dialysis section it has all sorts of stuff including recipes. Good luck and I hope this helps some.

from our lectures in anatomy, since your mother has hyperkalemia, you should increase her sodium intake. =) so that the sodium would bind to the ion receptors of the cell and that would bring about homeostasis or balance. so eat foods that are high in sodium like bacon, sausage, olives,pancake/waffle mixes, pickles, cakes, seafoods, salt, cottage cheese, tomato, etc=) make sure its still on moderation.=) God bless,=)

i would recommend fresh fruit and veg, plenty of water and for iron deficency i would recommend lots of greens maybe eat some liver.
if your grandmother is suffering from excess of potassium you may not want to give her meat or milk.
hope this helps!! and don't forget she needs plenty of sleep!
